How about Oozes as the reincarnation of faithless people?
If someone pays no homage to any God/Fiend/GOO/Archfey etc throughout their life they do not get the reward of an "afterlife" in whatever form that might normally have taken, instead they find themselves reduced to the most basic of forms cpaable of little else but surviving in the most base way. It could lead to some interesting folklore and "old wives tales" and warnings to little children, to paraphrase the curse from the film: The Wolf-man: "When a man who is pure in heart but does not say his prayers by night dies, he may become formless when the wreath flowers bloom and their lifeless body is sealed in a tomb".
It might be something better suited for a Domain of Dread but it could be workable.

I had a very similar idea once, gooification as punishment by the gods. But you know, without waiting for actual death to occur, just - God descends from on high, flanked by his angels with trumpets and flaming swords, and smites you with his fury, turning you into an ooze.
I like the drama, but avoid using any personal apperances of gods in my games - except that one game where all the gods are more like local spirits, powerful but by no means all-powerful. There's this one guy, the God in the Tree, who's had several appearances. In that game, it's possible to 'create' gods (if you're familiar with Neil Gaiman, you may even have an inkling of how), and the God in the Tree was created by a tribe of lizardfolk who fled their tyrannical homeland and tried to start anew. Well, if you imagine an amber golem with a golden haze around him and something tiny encased in the amber, you're on the right track. But he has like, only 45-60 worshippers, so in order to exist, he has to use ... tricks. He's cool =)

Oh, I like this idea a lot for a Domain of Dread. I'm picturing set pieces and bits cribbed from the Hammer Dracula movies (the run-down church no one goes to, with a drunken priest who's lost his faith), Ghostbusters 2 (the underground ooze river that runs under the entire land) and maybe even Yuzna's Society (if you know, you know). The Darklords could be two eternal rivals -- one the mad, Caligura-like "godking" who everyone only pretends to worship to stay off his radar, and the other the "militantly atheist" rebel leader who doesn't really believe in anything he says and is only interested in gaining power for himself

Many years/millenia ago there was a collision betweent he Elemental Planes of Water and Earth which produced the Para-Elemental Plane of Ooze (I think this was actually a thing in 3e). The Plane of Ooze is one of stagnant waters, swamps, bayou's and is almost a creature in its own right. Over/Under/through the ground and swimming within its swamps and oceans of stangnat waters is "The Primordial"; an Ooze of genius level intellect that is an entity so large that it encapsulates, and permeates, almost the entire plane and whose only agenda is to experience every form of life in an attempt to fully understand who/what it is.
On the Para-Elemental Plane of Slime the Primordial is able to assume the form and likeness of any creature that sets foot on the plane and should it "taste" them it also gains knowledge of all resistances, immunities, vulnerabilities and special abilites they have and it can then also mimic them.
In order to achieve its goal the Primordial sends small amounts of itself to other planes to explore. These are what adventures come across as Oozes, Molds and Slimes. What many adventurers do not realise is that when two ro more slimes come in close proximity they actually become more intelligent and capable of many interesting and even extraordinary things, this is where Mimic's, Oblex and Slime based Changlings come into it and you could give monstes spells like Alter Self, Polymorph and even True Polymorph to represent particularly powerful Slimes.
In this way the various Slime based critters are more akin ot otherwordly explorers than mindless dungeon cleaning oddities..

Holy hell this is a cool writeup, I like how much you have thought about a monster that could be relegated to a 2-dimensional default option for battle fodder.
I just got the idea from you saying oozes carry portions of those it feeds on, that eating from that ooze continues this memory/skill chain to a drug-like effect. I'm imagining someone eating little pieces of ooze and feeling incredibly capable because they are actually feeling what it's like to have certain capabilities of those who were eaten by that ooze, much like certain stimulant drugs (for example cocaine when shown in TV and movies) make you feel more capable than humanly possible and even god-like. Maybe after eating too much, you start hearing the Ur-ooze and voices of the ooze's meals, and it starts to change your grasp on your identity and reality.

Monster parts becoming sort of drugs are a splendid idea. I have something called Khef in my games - a sentient, psionic plant. The seeds and pollen of the plant infect those who eat or inhale them, making them want to protect the plant (via low key psionics and euphoric stimulants). Now ... kill the plant, and you get a nice, non-addictive drug.
However, if the plant is still alive, you're royally screwed.
