you read the title, I'm trying to make some shops and keepers for my spelljammer campaign.
im aiming for 5
here are my ideas
The Wise Man. a very old humanoid with a pet monkey who runs a trading stall. the trading stall itself can apparently teleport, showing up where it has no business being and dissapeering soon after. the Wise Man himself has an infinite wisdom score, but a 10 in everything else. he can see through illusions without even trying, he can smell lies, he can judge the exact hit points of a creature(and jacks up the prices on healing potions accordingly). he sells a bit of everything from healing potions to basic weapons to fresh baked bread
some kind of high-end magic store. think a Prada outlet but with overpriced magic items
a backrooms-like department store
some kind of moving shop. maybe its a ship, maybe it walks around
a shop run by a fey creature that sells modern items
anything helps

I've always liked the idea of a parasitic shop. You know the way things like Spirit Halloween pop up in empty units? Like that except the shop itself is a sort of teleporting parasite that moves from one empty shop unit to another, morphing it's wares to most fit the current mood
Or how about playing with the relative sizes of species? No reason a tiny fairy would be running a shop sized to suit humans so put something the party need in a shop they won't be able to fit in
I had one who was a very strange, twisted pale man who runs an apothecaries. He has potions, but his main business is spare parts. He speaks like Salad Fingers, and will buy bits of creatures from the party, and try to sell them spare limbs and organs.

This may not be super sci-fi, but what if you did a J.J. Holmes (I think that's his name, I have no clue if it actually is) style shopkeep. To clarify J.J. Holmes was America's first serial killer and he had an inn/hotel and from the people staying there he chose who to... unalive using interesting methods. Makes a mystery for the players to solve, so side quest. NVM, change J.J. to H.H.

Here's a couple from my game, I'll pop the descriptive bits in spoilers to avoid a long post:
Aerie and Raunchy and the Eerie Carnival.
The Eerie carnival is a travelling carnival with many sideshows and attractions, among which is a "gift shop" and "Grotesquerie".
The gift shop contains fake items such as fake shrunken skulls, flags and fool gold coins. The Grotesquerie is the "legitimate" side of their illegal business. They run stolen and dangerous wares all over the country, these range from necromantic spell components to body parts to ancient tomes and ransacked treasures.
Aerie is an elf like figure, with pale blue skin and green hair although he has what could best be described as a comb over as he has lost a lot of hair. He is also slightly overweight for an elf as well. Aerie is a Half Sea Elf. Aerie is gruff and prone to being quite aggressive although strangely only gets violent with Raunchy. If anyone else tries provoking a fight he gets very verbally aggressive but ultimately backs down or runs away.
Raunchy is human and also slightly overweight and gets rather sweaty with any kind of exertion and is prone to making jokes that many people do not get. Raunchy talks with a foppish turn of phrase and always makes out he comes form noble stock. Raunchy is prone to starting fights with Aerie, most of which Raunchy loses or he has to concede defeat.
Aerie and Raunchy are both effectively level 1 Rogues and both have Proficiency and Expertise with Deception and Performance and have the Entertainer background. They are trained clowns and performers and all the violence they commit upon each other is largely pantomime violence but they are so good at performing that many onlookers cannot tell the difference. Aerie and Raunchy know just where and how to hit someone to cause blood to flow without actually causing damage and use the environment to help with any violent charade they do and it is not uncommon for them to be seen using frying pans and clubs against each other.
Next up: BF Head & Family traders:
BF Head (The BF stands for Big Floating, but he is also known as Bif) and "BF Head & Family traders".
BF Head was a wizard who, whilst adventuring in the Underdark, came across a spell scroll containing the True Polymorph spell. Unfortunately for BF Head he had a mistranslation whilst perusing the scroll and thought it was the standard level 4 polymorph spell. When he tried to add it to his spell book and cast it for the first time the spell transformed him into the appearance of a beholder and the magical overflow turned his mind into mental Swiss cheese. BF Head floated mindlessly through the Underdark and eventually found its way back to the surface realm, fortunately most denizens of the Underdark saw his beholder form and kept well away from him little realising that he had was a mindless creature. Eventually BF Head drifted into a small town and after some initial trepidation the locals came to see him as harmless and used him as a form of draft animal to pull and push things.
As the years passed various sages and spell casters grew to hear about this monstrosity that the town used and came to investigate, eventually coming to find that, yes, it was a beholder, but that it was also affected by some form of "feeblemind" spell. A few years passed as the townsfolk and the sages debated whether or not to try and help the beholder or just destroy it or leave it as it was and eventually the decision came to try and restore its mind. They were successful and BF Head was returned to sentience. The towns folk called him Big Floating Head or BF Head or Bif for short and when he regained his faculties.
Bif discovered that he had lost some of his spell casting prowess but rather liked his new form. He gradually took over the local merchants emporium and has grown into a successful network of contacts and traders. The "Family" in the merchants name is the town where BF Head resides as he regards the whole town as family.
Effectively treat BF Head as a Beholder but with his former Wizard days altered his Eye rays as follows: Anti-magic Cone is replaced with a See Invisibility Cone, and the Eye Stalks have the powers of: Charm Person, Hold Person, Chromatic Orb, Detect Magic, Identify, Tongues, Dimension Door, Leomunds Secret Chest and Mage Hand.
There we go, fee free to use them if you want.
