As long as you don’t port anything over to a VTT then the players see only their character sheets. If you do port over to a VTT then what they see is goverened by that VTT.
If you set your dice rolls to 'everyone' then players will see the creature name and type of roll in the game log. If you're trying to keep details from players to prevent metagaming this will give it away. The default for dice rolls for each combat is 'self', so your players won't see your rolls unless to want them to.
As the DM when I use the encounter system, can I have the rolls (say damage from a goblin scimitar for example) default to show everyone or do I have to manually change it to “show everyone” then choose the dice my self and then afterwards add the modifiers every time? am only using DnD Beyond no other websites.

I've never used the encounter system on the site, when you hit run encounter for a campaign what do your players see?
can they see all the monsters you plan to have them face, or the title and notes?
I don't want to forget thoughts I had about the encounter as I was planning it but I don't want them to see those thoughts
I also don't want them to know how many monsters are left until I tell them their done
They don't see anything. They only see their character sheets.
