Just a quick query, one of my players is levelling up his baby druid and has chosen Circle of the Stars, which looks AMAZING and I can't wait to narrate it! But as it's play test, I'm wondering what kind of feedback / info would it be useful to keep track of, in terms of providing feedback on the content? And how do you even provide feedback?

Interesting question! I've just recently decided to do some serious rules experimentation so I've been thinking about how to evaluate game balance and playability of late, as well.
Here's some thought on things to evaluate:
Functionality: do the experimental rules accomplish what they are intended to do? Also, what kind of Player or Group would these rules need in order to work? For example, I once adopted popcorn initiative to make combat more tactically flexible and interesting. It didn't work, because my Players weren't particularly interested in tactical nuance and flexibility, so it didn't work at my table, but it would work for some groups. What is the intended outcome of these rules? What is the intended flavor, or effect on the game's tone? Does it accomplish these things?
Character-to-Character Power Balance: Does your Druid now surge ahead of their teammates in terms of effectiveness? Does their Character go from being a voice in the choir to the soloist? Do you have situations where the optimal solution of the Party is to sit back and let the Druid handle the situation? This isn't a problem if this happens from time to time; every Player & every Character should get some spotlight time, but are they getting a disproportionate amount of it?
Druid-to-Druid Power Balance: Ask yourself, and try to evaluate, that if you had more than one Druid in the Party ( and you might ), whether spotlight balance would shift heavily to the Circle of Stars Druid? Would a Druid playing min-maxer Player pick that circle a disproportionate amount of time?
Class-to-Class Power Balance: Do the new rules give the Character abilities that were once the sole domain of another class? Does it possibly cause role conflict with other Characters if you had a Circle of Stars Druid Character in the Party? If your new rules gave the Character meta-magic, wouldn't that step on the toes of the Sorcerer Class?
Rate of Resource Depletion: The Party has fought off the therblings, got pretty chewed up. They need a long rest ... except for the Circle of Stars Druid who not only kicked therbling butt, but it still fresh and capable of taking on another wave or two. Just like you don't want a Character than needs a long rest more often than the rest of the party - and thus slows everyone down - but you don't want a super-powered Character who feels like the rest of the Party is slowing them down.
Is it fun: It might be the best, most balanced, and carefully designed rule-set since RPGs were invented, but if it's not fun, no one will use it.
Is it clear: Again, if it's hard to understand how to use, or it's open to multiple - potentially contradictory - interpretations, the rules need work.
Is it thematically consistent: Pretty self-explanatory. If the Druid's new abilities don't fit the overall feel of the game, or the overall concept of Druids, then it's a problem. No summoning AK-47s for use in combat in a high fantasy setting, and no spells like Toxic Oil Spill for a Nature focused Character.

As for where to provide feedback, I'm not sure. You can certainly discuss it on the class specific forums here on DnDB, but I don't know if that's an official feedback channel, or what other channels that exist that might be official.

The Circle of Stars was in an older UA, and the survey for it closed months and months ago, so WotC is no longer accepting feedback on that subclass. In fact, it’s slated for official publication in Tasha’s this coming November.
