So for my party of 4 level 6 pcs (plus some npcs) I'm gonna have a fight for them, the gist of it is that they're gonna be standing on rocks in an acid lake, with a hydra swimming around under them popping it's heads out to bite them. They'll be jumping from rocks trying to kill it so they can get to a castle in the middle of the lake. Any ideas of how to make this challenging and fun?

Make movement very necessary. Make the rocks light, and floaty, like pumice, and have them only support player weight for a tur or so before the players have to move or sink into the acid.

And if you do it like this, that would also mean the hydra could upend the rocks from underneath, either on purpose or not. Dex save (or maybe acrobatics check) to stay on it.
I wouldn’t make being in the acid too punishing maybe just a d6 or something. But if you really want to be mean, treat it like a rust monster. Any character that goes in starts taking damage to their armor or whatever gear is appropriate. Since I doubt they can get anything new anyplace nearby, I’d maybe allow a mending cantrip to fix the damage once they’re out of combat. Or if someone has an appropriate tool proficiency — it’s always nice to let people use those.
Look at the player's abilities and skills and make sure they can handle the obstacles to keep them upright while still swinging a sword, shooting an arrow, or casting a spell and not falling too close into the TPK territory. If the terrain is difficult the results could put them in a prone position, the Hydra will get a significant advantage on those downed players. I'm not saying this is a bad idea, but consider what other actions or checks you may call for to keep the tension high and them stable but not put them in a no-win situation.
