The more helpful but also more tedious answer is as follows:
Whether or not a mimic would eat another mimic depends on the world the DM has created, and the individual mimic in question. Mimics have always been depicted as, if nothing else, pragmatic. They do whatever it is they think they need to in order to survive. Most often, this means eating anything with even a trace of nutritional value whenever they get they chance. Other times, it means begging, pleading, and negotiating with creatures it recognizes could do serious harm to it in order to be spared. Then, Tasha's Cauldron of Everything (re)introduces us to the mimic colony, a large number of mimics of various sizes working and living together as a communal organism, essentially living in harmony with one another to help ensure mutual survival, where the needs of the many outweigh the needs of the one.
If/when you publish, I'd love to see how it turns out.

Seems like a lot of work. But I'm assuming it will be so worth it.

It will be
and I am going to put Meta Mimic in Legendary Mimics because, yeah
The mimic mimic is a treasure chest that, on inspection, looks somewhat suspicious, with features such as a lock that appears melted shut, and thus might cause paranoid dungeon crawlers to either avoid it, or attack it. If attacked, it self-destructs noisily, causing 3d8 thunder damage (Con DC 12 half) to all creatures and objects within 10', destroying its contents and alerting all monsters within 300'. It is otherwise harmless and may be opened without risk.
Shapechanger. The mimic can use its action to polymorph into an object or back into its true, amorphous form. Its statistics are the same in each form. Any equipment it is wearing or carrying isn't transformed. It reverts to its true form if it dies.
Adhesive (Object Form Only). The mimic adheres to anything that touches it. A Huge or smaller creature adhered to the mimic is also grappled by it (escape DC 13). Ability checks made to escape this grapple have disadvantage.
False Appearance (Object Form Only). While the mimic remains motionless, it is indistinguishable from an ordinary object, typically made of confectionery.
Grappler. The mimic has advantage on attack rolls against any creature grappled by it.
Actions
Pseudopod.Melee Weapon Attack: +5 to hit, reach 5 ft., one target. Hit: 7 (1d8 + 3) bludgeoning damage. If the mimic is in object form, the target is subjected to its Adhesive trait.
Bite.Melee Weapon Attack: +5 to hit, reach 5 ft., one target. Hit: 7 (1d8 + 3) piercing damage plus 4 (1d8) acid damage.
Famish. One creature the mimic is grappling must succeed on a DC 12 Wisdom saving throw or be charmed by the mimic until the end of the mimic's next turn.
Force Feed.Melee Weapon Attack: +5 to hit, reach 5 ft., one creature that is grappled by the mimic. Hit: The target regains 1 hit point, and receives enough nourishment to sustain it for one day.
If the target is a creature other than a construct or undead, it must succeed on a DC 12 Constitution saving throw or be infected with a disease—a minuscule mimic larva, which the target swallows. A creature charmed by the mimic automatically fails this saving throw.
At the end of each of its turns, the target takes 2 (1d4) acid damage per larva it has swallowed (maximum of 10d4). A mimic-infested target dies if it drops to 0 hit points, at which point each larva emerges from the corpse as a juvenile mimic. If a mimic-infested creature is targeted by an effect that cures disease or removes a curse, all the mimics infesting it wither away.
Description
While most mimics are the epitome of ambush hunters, lying in wait to devour unwary adventurers, these bizarre specimens are the antithesis to the concept: they force their prey to eat them rather than the other way around.
This variety of mimic reproduces through parasitic budding. By forcing a creature to "eat" it, the mimic deposits developing larva into the victim's stomach. Each bite from the mimic's flesh rapidly develops into a new juvenile, which immediately begins to eat its way out of its host.
Seeing this thread pop up motivated me to create a magic "item" for the players of my campaign:
Weapon(?): The Hand That Feeds
This versatile weapon is actually a (somewhat) friendly mimic in disguise. Attuning to this fascinating creature links it telepathically to the wielder, though The Hand That Feeds can only communicate with emotions such as "hungry", "scared", or "happy". By commanding it as a bonus action, The Hand That Feeds can transform itself into any non-magical melee weapon appropriate for a medium sized creature and deals an additional 1d4 piercing damage as rows of teeth appear along its length to tear into the flesh of its victim.
For each day that The Hand That Feeds is not fed one ration worth of edible material, or used to deal at least 4 points of damage, there is a cumulative 10% chance that it attempts to bite the next person who touches it. Satisfying its hunger resets this bite chance to zero.
If The Hand That Feeds is left to go hungry for a full week, it unattunes itself from its owner and attempts to find a new source of nourishment.
Ability Scores As Small or Tiny Mimic Senses Darkvision 60ft Bite. Melee weapon attack: +3 to hit, reach 5 ft., one target. Hit: 2 (1d4) piercing damage plus 2 (1d4) acid damage.
Ultimately, how you choose to make a pdf is up to you.
Though, it should be of note that the pseudo-mimic as I presented it is specifically is based on the character of "the Luggage" from Sir Terry Pratchett's Discworld novels. I would ask that you reinclude the final line of the creature's description from its statblock, or a variation thereof acknowledging Sir Terry, for whom the monster stat block was made in homage. Not only because it would be nice to know he and his works will be remembered (he passed away in March of 2015), but also to potentially protect from any potential legal issues (either actual or perceived).

I actually missed that somehow, I was just looking at it and noticed I missed something, I'm fixing that right now actually
There's also an updated version of the Mimicromnicon. I only just now realized it's been in my private brews this whole time and I never actually published it: a derp moment on my part. On the other hand, I suppose it's a good thing, because I took the question of a spellbook into consideration, and added it in the familiar traits without having to go through and make a new version. I'll be publishing it for real and for true in a few minutes, then updating the post on the first page of this thread.
EDIT:
Updated Mimicromnicon on the first page and finally published the corresponding stats (still can't believe I never did...). It can now be found here: The Mimicromnicon: The Mimic Book of Mimics
Nah. The original version I failed to publish would be a better-suited companion to a lower-level party just starting out while the updated version might be a bit too strong in such hands. Having two different versions published will give DMs more options.
i would love to see this compiled into an actual WoTC-style book. maybe as a free pdf? if you would like, i could help with some illustrations, and you can easily copy and paste it onto homebrewery
A few different people have begun making pdfs based on this thread in homebrewery and gmbinder. For me, the project is a backburner that I take up and work on either when I have no other projects (I'm currently in the middle of writing up a campaign setting for our home game group), or when someone comes up with a suggestion I think is incredibly interesting.
I may or may not put together a pdf of my own in the future, and if/when that day comes, illustrations would certainly be welcome. But, I feel you should know that such a pdf would turn no profit, and would be a free resource, which would mean illustrating for it would be on a volunteer basis, since there will be no income off of it.
Thanks! Other question, would a mimic eat another mimic?
And I am going to make and publish the mimic book of mimics (as a magic item and a monster), with links to all the stuff
True but unhelpful answer is "yes and no".

o/ \🥛🍪 Hey, take care of yourself alright?
Arguably mimics (being immune to acid, which is the damage type done by a mimic stomach) are indigestible.
On the mimic book of mimics, sounds like a book you literally can't put down.
It will be

Also, can I put edits by M(my very OP character) for the correct spelling of words for the mimics when they spell stuff wrong?
EDIT: NEVERMIND
How about a reverse mimic: the treasure chest that forces you to eat it compulsively?
Anything is edible if you try hard enough!
I am a swimmer. If you see me running, you should run too, because it means something horrible is chasing me.
HAHAHAHAHA! I like that!
Give me a few minutes...
