I am creating a oneshot for my group which had an Ancient Greek theme. Whole story is that they need to restore the story of the legend of labyrinth of Knossos and Theseus.
The big boss will be a group of Minotaur. I have puzzles and traps available For along the way. I need ideas of little monsters that could get in the way but are easy to swot by the players.
1) If you want to hone in on the horror of the sacrifices of the boys to the Minotaur you can have a survivor gone mad and violent using the stat block of a ghoul or ghast. You can also use undead like ghost or specter to represent the victims.
2) Daedalus is also a famous inventor so he may have some constructs For example:
I did those as magical constructs made of bronze but you can choose to instead do them as possessed or clock work constructs. For possessed constructs you can remove anti magic susceptibility and replace it with something like a turn undead susceptibility where they are effected by spells like dispel evil and good and you can also give them proper mental stats like intelligence. For clockwork constructs just remove anti magic susceptibility. If you want materials other than bronze change the ac, I got 13 from the bronze scout and then added dex for the highly agile tunnelers. You can also use 18 if you want them to be armored.
3) The Minotaur is a curse from the gods so some divine and fiendish entities may be involved. Something like [monsters]imp[/monster] or quasit could be there to play tricks on the party. They could do things like pretend to be the Minotaur and or people running away from it.
4) The Minotaur also has some themes of body horror being the fusion of a cow and a man. You can also have some other mutants this is a little darker and reminiscent of something like silent hill so I'll spoiler it.
Something like a gibbering mouther can be the remains of failed minotaurs made by what ever horrific method you want. For example maybe in anger at his wife king Minos gave her to the Minotaur.
Bandits/Guards/Commoners/NPCs: Who knows who else got stuck in here, or made a base here.
Like, a whole tribe of desperate cannibal-crazies who compete with the minotaur for the only source of food: Hapless adventureres or innocents who wander into the maze.
Or a wizard tower. Like, a wizard transported his tower into the maze, in order to get some peace and quiet. Now adventurers come and disturb his research at all hours, driving him more than a little mad.

you ever watch the 1986 Henson movie Labrynth, starring David Bowie? I always liked the cleaner. you know the giant drill, with smaller drills on it that fills up the passageway and slowly bears down on you, ever gaining?

There aren't a whole lot of specifically maze-themed monsters, though if you need something beefier than minotaurs you could use a goristro.
Gelatinous Cube: These can be really annoying for players as the fill up a hallways and chase down players.
Gorgon: "Huh, cool statues on the walls, wait what do you mean there movi..." Last words of a poor adventurer.
Mimic: Fake chests are always fun to mess with players!

For a horror angle, they could be stalked by some reskinned version of the relentless juggernaut from Van Richten's.
