1) Basically you can adapt any dungeon map you have to an underwater enviroment. Just put a lot of underwater details, like barnacles, seaweed, ...sharks, mussels. A dungeon of a old temple can be a a dungeon of a lost temple in the ocean.
2) Chests may be huge sea-shells.
3) For side quests, old artefacts that are long lost are perfect for a underwater enviroment. Also use a lot of shipwrecks.
To add urgency to a situation you could have a leak spring that threatens to flood the entire dungeon, with the Players inside! The players could then attempt to close off sections, use mending, shape stone, shape water to control or repair the leak, or simply run. Maybe that would be the trap that springs after they beat the BBEG or take a specific item, like in the Disney movie Aladdin.
You can also have pools in the otherwise mostly dry underwater dungeon that lead to the outside, from the pools various creatures could hide, I had one game where Sahuagin hid in the pools and tried to pull the players in so that they would have to fight both drowning and the attacks of the Sahuagin.

They should definitely fend off Giant Eels that shoot lightning bolts from their tails. *nods*
Brilliant! I don't suppose you'd like to write up a stat block for them and put it on here?
GIANT LIGHTNING EEL Large beast, unaligned

Lightning Jolt (Recharge 5-6). One creature the eel touches within 5 feet of it outside water, or each creature within 15 feet of it in a body of water, must make a DC 12 Constitution saving throw. On failed save, a target takes 13 (3d8) lightning damage. If the target takes any of this damage, the target is stunned until the end of the eel 's next turn. On a successful save, a target takes half as much damage and isn't stunned.

Actually, stats for Giant lightning Eels appears in Tales of the Yawing Portal.
Is it bad that I forgot I even had that book?
Maybe a little. Maybe not. How many books do you have?
Just in 5e? Nine
2 PHBs, MM, DMG, Volo's Guide, Yawning Portal, Out of the Abyss, Princes of the Apocalypse, and Curse of Strahd
Including 3e and 4e? I have no damn clue... Those were rough because every time a supplement came out, I had to have it (for some ungodly reason). My favorite books are probably the 4e Monster Manuals (I have 1, 2, and 3 and am constantly converting monsters for my campaigns) or the 3e Book of Challenges.

No SCAG?
I KNOW!!! I want to go get it, but I feel like my wife will murder me if I come home with another book (which is unfair since she is one of my PCs and only stands to gain from me having another book!)

Submarine with PCs that can breathe/operate efficiently underwater, or is there some form of magic/transport involved?

Lots of things will want to eat the PCs; everything from CR 0 quippers to CR 5 giant sharks.
