So I want to create a race with a racial trait that allowsa choice of 2 proficiencies in a couple of skills. How would I go about and do this? Can't seem to find the right option

There is no Modifier Subtype for the exact list you want, there never is. This is a situation best accomplished with Options. Make each Option grant a single proficiency and give them a choice of two Options at 1st level and voila. I explain how to properly set up Options here; (Subclass & Races #1):
