D&D is my hobby, but within D&D I have a hobby; custom Monastic Traditions. Here are two, and the other two are here.
Way of the Phoenix:
3rd level: Flaming Strike: As a bonus action, you can spend ki points up to half your monk level to set yourself on fire, dealing 2d4 per ki point to anything that comes in contact with the flames, including you, as well as anything that starts its turn in contact with the flames, again, including you. Also, your HP is 1d10 per level.
6th level: Eye of the Phoenix: While using Flaming Strike, you gain a bonus to attack rolls equal to two plus twice the number of ki points spent. Also, your HP is 1d12 per level.
11th level: Aura of the Phoenix: You have resistance to cold damage and are immune to extreme heat. While using Flaming Strike, you have immunity to cold damage and resistance to fire damage, you have advantage on Intimidation rolls, and the flames extend 5' per ki point spent.
17th level: Life of the Phoenix: If you are reduced to 0 HP while using Flaming Strike, you, anything you're wearing, and anything you're carrying crumble to ashes, reappearing at dawn in a location of your choosing within 1 mile, fully healed. Also, your HP is 3d4 per level.
Way of the Storm:
3rd level: When you hit with an unarmed attack, you can spend one ki point to add the effects of shocking grasp to the attack. If you do so, you can spend another ki point to throw the target [your martial arts damage die x 5'] in any direction, dealing thunder damage equal to the number rolled.
6th level: Immune to ordinary, nonmagical weather; advantage on rolls to avoid being knocked prone; when you are subjected to an effect that could knock you prone, you can use your reaction to make one attack against the source of the effect, if possible.
11th level: Totemic Attunement (Eagle)
17th level: Immune to anything that could be considered weather, up to and including rains of assorted animals, volcanic ash, storm of vengeance, and the howling winds of Pandemonium; whenever you aim both Flurry of Blows attacks at the same target, each creature and object in a 5' cone centered on you and including it must succeed on a Str save or be pushed back as per the second half of your 3rd-level feature.

Way of the Vampire:
3rd level: You learn the chill touch cantrip. Wisdom is your spellcasting ability for it. When you hit with an unarmed strike, you can spend 1 ki point to add the effects of chill touch to the attack.
6th level: You can spend 4 ki points to cast vampiric touch. It uses the Attack action and counts as an unarmed strike. While concentrating on it, you have advantage on Con saves.
11th level: Inured to Undeath
17th level: When you reduce a creature to 0 hit points with an unarmed strike or a spell you gained from this subclass while concentrating on your vampiric touch, you can instantly kill it and regain 1 ki point.

Skysongs: look like elves, but with feathered wings, cat eyes, and snake fangs. They love music in all forms.
Balancing against aarakocra, I come up with +2 Cha, +1 Dex, flying speed, and 1/day casting of the unearthly chorus spell from the Unearthed Arcana Starter Spells article. If the flying speed is a bit lower than the aarakocra's, they can have Darkvision too. Add fluff to taste.
