I'm only going to touch on the races. First off, the formatting is a little hard to read. If you look at SCAG, MToF, GGtR, or WGtE, you'll see that there is a style that variant races are done in, which is very similar to races.
Tui Bell should have the proficiency attached to the DC
Tautara's Arcane Gifted is nothing wrapped up as something. While those ability score prerequisites can be quite annoying, they're also making sure you're not about to make a dumb decision. If you don't have a high intelligence, you shouldn't be a wizard, you simply won't be good at it. Perhaps hand out a wizard cantrip.
Scrap the second ability in Kea's Adapted to the Cold. DMs already have ultimate discretion but if your ability warrants giving that caveat, it displays a level of uncertainty in the ability. If you are uncertain, scrap the ability. If it's because you don't like the flavor text you wrote, then scrap the flavor text.
I know I said I was only going to talk about races, but did you calculate the CRs for the creatures based off the DMG? If not you should. I also assume there are other creatures that might not be playable races on the islands and are not CR 20 and I would like to see those.

Thanks for thee feedback. I should have mentioned it is a work in progress so any feedback is welcome! I will be adding plenty more creatures very shortly, and you are right about the tui bell. Thank you for your input!
Did you seek any consultation with Māori about this project? There are so many mistakes and inconsistencies. As a Māori person I'd ask that you seek consultation and take this down until you've done so.
Nga mihi,
