I've got both short swords ready to go. I'll probably use my move action to sweep around, and do a backstab/sneak attack action at advantage, if possible.
Chubby inhales deeply, pulls up his big boy pants, and shuttles his massive body forward (Dash) and then around the right side of the boxes to our right, doubling his normal 25 foot speed (black line + blue line):
Whilst doing so, he lets out a loud and obnoxious war call (trying to get the weird water beast's attention), goading it to focus on Chubby and not notice Crispy running around the other end of the boxes to flank it.
As you round the corner Chubbs, you see the entity, still in it’s snake like form. You caught it just as it began to dissolve into the water- but it sees you and rears back, forming it’s shape again and gives you a look of pure bloodlust.

"Scusemepardonme!" Crispy grunts as she leaps on top of the crates and lands on the other side of the blood sucking water-faced monster from god knows where. As Chubby yells and distracts it, she slowly rises and prepares to strike.
Chubbs and Crispy look at each other and nod as they make a quick plan. As a well coordinated team, Chubbs thunders around the northern boxes, keeping his footing in the inch deep water, doing his best to keep his breath while also bellowing a battle cry. Simultaneously, Crispy puts a hand on the box next to him, leaping over into the dark, unlit side of the cargo bay. The slithering tracker sees Chubby pounding his way around the boxes coming right up to it and it rears back, ready to strike, before feeling two deep lacerations through it's watery body run down its back. It lets out another muffled, watery scream. Crispy feels like 's slashing through a waterfall, but can feel some resistance on his blade as it finds purchase.
Sorry to do this to you Crispy, but future attacks will be made at disadvantage as you are currently in darkness unless something can be done about it- Who has the lantern?
Additionally, in the future, remember to state the type of damage and whether it's magical or not. [E.g. nonmagical slashing, magical piercing, magical fire, nonmagical acid, etc...]

Nia turned to face the direction that their enemy was and used her staff to aim. Calling out an arcane incantation she cast Scorching Ray at the beast.
Nia runs at Gregor, who lowers both of his hands, interlocking his fingers with the palms up. She places a foot right in the middle and Gregor flings Nia up in the air, giving her a clear shot over the crates blocking the way! She throws her hand open at the creature, gives a little wink as their eyes meet, and three lightning fast rays of heat blast the creature and around it's immediate area, sending steam whooshing up in the air. She lands nicely on the same side of the crates in a three point landing, and blows the smoke off the tips of her fingers.

Taking a leaf out of Crispy's book, Liam leaps atop the crates, although he remains on top of them rather than jumping to the other side. With his darkvision and the elevated vantage point he should have clear line of sight to the creature, so he'll cast Magic Missile at Lv2, with all four darts blasting the single target.
So that's 4, 5, 3, and 2, all of it magical force damage.

Have to agree with Crispy, that's actually very helpful, especially since you included a distance scale.
So it's where the big red dot in the upper right hand corner is?
Nah, that's the boiler. I interpreted it that the Tracker is somewhere on the side with the question marks.

Chubb, I believe, whenever he goes, will go "up", I will sprint "down" and try and flank it. That's the intention.

The crates are probably around 3’ high, so yeah for sure.
