You make your way to the sentries, and they are happy to send one of them with you as a guide. The guide won't be getting involved with poking (deemed too dangerous), but will provide ranged combat assistance if a shapeshifter is found.
Gor follows the group, keeping the path as they go. He reaches out with the butt of his maul and pokes and things, and sometimes grabs random stuff with his hand and gives it a shake to see if anything tries to murder him.
"This is a big place, brothers." Gor says, completely lost in the enormity of the Gnome's stronghold. "I must say, oah, I'm at a bit of a loss. If this was the forest it'd be easy but here..."
He shakes a nearby table.
"...it could be anything. It could be a whole room..."
"While I am happy to take you around, I am not sure what would be best for finding a shapeshifter. I assume that it would be somewhere that is less populated otherwise people would have seen it. By that logic, there are four rooms I can think of, though I believe likely only 3 of those. It could be in the throne room, in the wine storage, with the barrel crabs or in the pantry. But to get to the pantry it would have to pass through the kitchen which is always busy."
You make your way there and as shown on the map there is 8 barrels in the room, and nothing else. The 4 to the south have wooden spigots inserted. "It is always nice to see it full here. Though last time I checked, two of our started ones were almost all gone so it's probably time for some more to be made. Feel free to try some if you would like"
Gor smacks his lips at the mention of wine storage.
"Wine storage, you say?" He says with a sort of thirsty mirth. "Well then...might be some tasting in order here. Just to uh...rule out the possibility of monsters, you know?"
Gor goes around, grabbing barrels and giving them a hard shake...
Jayson, the cask sounds real. Quite hollow so you suspect this must be an almost empty one. Gor goes around giving shakes to barrels. All the untapped ones are full so fairly heavy. That is until he shakes his 5th barrel, and his hands get stuck to it. Gor, you are deemed grappled (escape DC13). A mouth then appears on the barrel which attempts to bite Gor. 23 to hit, 4 piercing damage plus 7 acid damage
Kosef is immediately going to bring light to this room, casting Faerie Fire near the mimic to try and give everyone Advantage against it. You should all roll with advantage as long as the mimic doesn't move.
Not needed. I have decided that I liked how combat works for pbp with the whole party going, then monsters going etc. The group that goes first will depend on surprise attacks (in this case, the mimic surprised and therefore went first), or I will do a group roll if both parties go to attack simultaneously.

Not quite how it works. It is all about a dex save when it is cast (which the mimic fails with a 10), and now it doesn't matter if the mimic moves. All attacks for the next minute (10 rounds) have advantage provided you keep concentration. I will assume you cast it in such a way as to limit party members being caught up in the area, however due to being attached to the mimic, there is no way to avoid Gor. I rolled for him (advantage due to danger sense) and he got a nat 20 (in game log) so is not glittery.
Gor looks excited as the barrel comes alive and lashes out, biting into him. However, as soon as he realizes he's stuck, and then somehow miraculously misses Faerie Fire during his struggle and then begins to rage.
"If some thing is going to send me to bask in Lodis's beauty for all eternity, it will not be full of delicious alcohol!" He says as he tears himself free of the thing's grip and reaches for his maul.

There is no visible reaction from the mimic, and you get the feeling it resisted the spell.
