Next 4 hours:
2 people continue to sleep 1 person always now awake (Galtheon, who just needs restful activity after 4 hours trance); 3 people each get 2.67 hours (accompanying Galtheon who does not need any more sleep)
At the end of 8 hours:
2 have now had solid sleep 1 is well fully rested (Galtheon) 3 have only 4 hours sleep
The 3 fully rested people take over allowing the others to rest.
2 hours later every caster is fully rested and others have 6 hours sleep.
Note: a little could be trimmed off this roster by waking someone earlier, since only 2 are needed to watch for the extra time, but my sense is that you might gain as much as half an hour perhaps.
Not a great way to *start* a mission, but once can make a case for 6 hours being enough for short stints.
If I was Okkar, I'd vote for (a); 1/3 of the party can't move at night, and a long day trevelling is 8 hours. But, being as how Galtheon will be fins no matter what, I'm not sure I mind ;-)

If the harpies did their thing at midnight, then in the longest case scenario we are starting to moving after midday on the next day, which means we may not reach the mine during daylight hours. For example, if the harpies attacked at 3 in the morning, then a 12-hour rest would mean starting on to the mine with only a few hours of daylight remaining... [[ ooc: Well, melee being melee...it's quick. We've been in 36 seconds of melee (or so), woke up maybe a minute or five before (because our sentry woke us -- or it was the start of the night).
The RAW say "If the rest is interrupted by a period of strenuous activity—at least 1 hour of...or similar Adventuring activity, the characters must begin the rest again to gain any benefit from it". So if we get back to resting in the next 50 mins or so, we can just complete our long rest.
My guess is we started resting not long after sunset/meal...if it's summer, away from the equator (but not too far), we can rest 8-10 hours in darkness. A long way from the equator, we have anywhere down to 0 hours of darkness so dawn is irrelevant. Either way though, unless we decide to track back to their nest tonight to see what other goodies they have, we can all have a relaaxing cup of tea with Ilecerys, and get some sleep and wake up more of less on schedule.
Note: In fact, afaict, technically it does not require sleep: "A Long Rest is a period of extended downtime, at least 8 hours long, during which a character sleeps or performs light activity: reading, talking, eating, or standing watch for no more than 2 hours", which makes all my intricate calculations wrong! I can sleep tonight without worrting about optimizations, yay! (of course I will worry, I almost had it solved).
So it looks like, we can do all we need in 10(?) hours so long as we don't spend more than 2 hours on watch, or 1 hour doing anything other than rest. For his turn that round, he will try to use Animal Handling to keep the Owlbear off the corpse of the harpy until he can pull the cloak off, then sling the corpse back to the owlbear for food: Animal Handling: 9 (If this fails, he will just keep his distance and let someone else try and get the cloak if they desire).
Assuming the Owlbears head away and the last harpy falls, Evan will cease concentration on the silence spell and see to those injured with a few curing spells:

Galtheon also has passive perception of 15 (but I don't)...the cloak does look interesting. If Evan failed to separate the Owlbear from the Harpy, perhaps we could investigate a little further when we bring the other bodies to the cave...though that might actually break our rest too much, and it does become important to know the time of night. We might even be able to entice them with a fresher body...
OOC: Evan would love to have the ring of protection (or even better, the cloak of protection if that is what the cloak is and they can recover it--the color pallette matches his seafaring attire better). If someone else can use the club, great! He can only use simple weapons and is now using a mace, so if at some point better magical weapons are found for others, he wouldn't mind getting the hand-me-down, but he sees himself more as a melee defender than a melee damage dealer. We should also have someone climb up to the harpies' nest and check it for treasure or other items of interest.
Edit: Also, Evan wouldn't mind carrying one of the silvered spears for use if they run into creatures with resistance to unsilvered weapons. He would be happy to return it to the party stash after the adventure for selling or perhaps spending part of his share to keep it if it shows itself as useful.

On the items, the note that due to the way combat played out an Owlbear had obtained a harpy wearing the cloak (of protection) when pc actions had been taken. Driving them off had a handle anima DC of 15, later 10, but in that scenario taking food away (or so they would perceive it) would be a 15 with disadvantage DC, quite difficult. Having a stealth member sneak into their cave after they are asleep is a better possibility however. They would not consume the cloak but would leave it with the bones. A stealthy character could slip into their cave to take it. The DC would be against 13, the Owlbear passive perception, and it would be rolled with advantage if a pc with their own passive perception of 13 or a higher, or a DC 10 Nature roll, to determine that after fearing on harpy meat bowl Owlbears are likely sleeping deeply. Advantage due to them being asleep. The cloak is light and causes little noise when taken from the pile of bones, so this is not a hard task compared to the handle animal scenario.
The club as mentioned does serve as a Monk weapon, if there is still some deliberation on who should use it, meaning a monk can use dexterity for attack and damage, and replace the club’s d4 with their Monk damage dice if that applies at this level. The choice is still up to the party of course, just mentioning that.

Yes, and notably people can share climbing gear. If you have the climber’s kit item note it includes special gear that prevent subsequent people from falling. Meaning if someone has the kit, the first climber would be the only one to risk falling, they can place the pitons and secure the device so that others if they fail their checks do not fall but are caught by the harness.
Deciding against taking the cloak from the body of the harpy in the owlbear’s grasp, Evan decides just to encourage them along with that Handle Animal check. He will suggest someone stealthy go grab the cloak after the owlbears gorge in the harpies.
