I have only played a couple of weeks, just bought PHB, DMG and MM.
I find the game to be very cool but very challenging.
For instance;
If I had a 5th Level Ranger (Human) with the "Two weapon fighting" ability,
I'm using 2 shortswords (1d6+1)+3 for strength bonus,
I have got the "Extra Attack ability" because I'm 5th level,
I also have the"Giant Killer" from the "Hunter Archetype".
I'm trying to figure out the "turn" if you will.
My understanding is:
1: Attack: 1st attack roll (Dominant hand 1d6+1+3) + 2nd attack roll (Dominant hand 1d6+1+3).
2: Bonus: Attack roll with my off-hand (non-dominant hand 1d6+1+3, I add the +3 because of my proficiency)
3: Reaction: If a Large Creature (or larger) misses with it's "attack" I (because I have the "Giant Killer" ability) can
make another "attack" with my dominant hand (1d6+1+3).
Is that correct?
Please remember I literally bought the books 2 weeks ago. Even though I'm 55 years old I'm but a child when it comes to D&D 5e.LOL

Close :) ... you do not add proficiency bonus to damage, only to the to hit roll. Damage only has any weapon bonus (eg magical weapon) and your stat modifier. Since a short sword is a finesse weapon it can add either the character's strength or dexterity modifier to hit and damage (whichever is higher).
Assuming your strength is 12 or 13 so that your strength bonus is +1. (If your dexterity is higher, which it likely is, then you'd use that number). At level 5, your proficiency bonus is +3.
This gives a to hit modifier of +4 with damage from a short sword of d6+1 (+1 from the stat bonus for the 12 or 13 strength) for the first and second attacks. The two weapon fighting attack using the light weapon (the other short sword) held in the other hand is made as a bonus action and does not add the stat modifier to damage unless you also have the Two Weapon Fighting style - so in this case the damage would be d6.
On the other hand, if your strength was 16 or 17 for a +3 modifier then the to hit modifier would be +6 (+3 stat, +3 proficiency) and the damage would be d6+3 for the first and second attacks with the attack action and still just d6 for the two weapon fighting attack with the bonus action.
I'm not sure where the (d6+1) +3 damage number in your example was coming from - you mention adding proficiency to damage so I initially assumed the +3 was your proficiency modifier for level 5 - which is NOT added to damage :) ).
P.S. Giant Killer is a bit situational since it only works against large creatures, I usually go with Colossus Slayer if I play a Hunter Ranger for the extra damage against already damaged opponents 1 time/turn.
Since I have been literally reading through the PHB at breakneck speed I thought the Shortsword did 1d6+1 damage on it's own + the modifier. Not sure how I got that but thanks for clearing that up. Yes I thought that proficiency bonus was only included in the "To hit" roll but not the "Damage roll. Thanks for clarifying that too. I have a Str of of 17(+3). I thought i was supposed to use strength. I didn't realize I could use the highest of my ability scores which is Dex (18+4). (Or as a Ranger I can only choose between Strength or Dexterity?)
So I guess it would be 1d6+4. Still the same "+" but calculated differently.

Your Class doesn't matter. Melee attacks default to using strength (and ranged attacks default to dexterity) but a weapon with the Finesse trait allows you to choose between Str or Dex (and though you would normally pick the higher of the two you actually don't need to).

Just a technicality but there is no "dominant hand" or "non-dominant hand" or "off-hand" (even though quite a few tables call it off-hand). You attack just as well with either hand so if you hold a weapon in each hand then you can do your attacks with the Attack Action in any way you like (both attacks with the weapon in one hand or both with the weapon in the other hand or one with each hand).
However if you want to use the Two-Weapon Fighting to make an attack with your bonus action then you need to do it with a weapon that you held while making an attack with the attack action and it also has to be a weapon that didn't make all attacks (so you can go; action - left,left -> bonus action - right or action - right,right -> bonus action - left or even action - left,right -> bonus action - either one). It might seem somewhat confusing and even counter intuitive at first glance but it is really easy to use in practice.
