The way I've understood Nick, applying this to a Scimitar-Rapier combo: make two attacks with the Scimitar (Attack + Nick), then one attack with the Rapier (bonus action). If you get the Extra Attack feature it applies to one weapon attack, since you've already used your bonus action. That's 4 attacks per turn.
The Light property extra attack must be with a different Light weapon than the Light weapon used iwith the Attack action to enable it.
The Dual Wielder extra attack must be with a different non-Two Handed melee weapon the Light weapon used iwith the Attack action to enable it..
The Nick property can only be applied once per turn. And it specifically shifts your Light Weapon property Bonus Action attack to your Attack action. It does not allow you to also again use your Bonus Action to make another attack. It just opens up your Bonus Action for other things like spells or cunning action, Monk focus, or Dual Wielder attack

I'm a DM and a player and want to confirm with proof of ruling that you can get 3 attacks if investing in the mastery and feat.
It's more or less clearly stated with the two items together.

Then, since it’s a different weapon from the initial attack it can take the dual wielding bonus action attack as well. If your L5+ then you do 2 short sword attacks as the main part of the attack action then add the 2 scimitar attacks as the Nick action in the attack action and as the dual wielding bonus action. ( and when the poor fool that took you on tries to run from the attacks you get a reaction attack as well for 5 possible attacks a round from L5 on.)

Treantmonk Update on today's video: Monty from the Dungeon Dudes contacted me to let me know he had asked Jeremy Crawford about Dual Wielder at Gencon, and here's how it works: It provides a single bonus action attack, so if you are using a weapon with the Nick Mastery that's one more attack. as far as I am aware, there is nothing to confirm that, RAW it's both attacks activated from a single attack and even if the Dual Wielder needed a different base attack, Nick adds it's attack to the 'attack action' itself.

Not necessarily if you consider the Scimitar attack made as part of the Attack action to be the one trigerring the Bonus Action attack from Dual Wielder feat .
In essence you have three attacks with two different weapons capable of generating the bonus action - only one does, your choice so once you pick it’s the other weapon your holding. If you say it’s one of the shortsword attacks then the bonus is a scimitar attack. If you say it’s the scimitar attack then the bonus is a short sword attack. Nothing RAW or RAI demands that it be the same attack each round even so you can chose depending on your foe and their vulnerabilities/features ( like some molds divide on a slice but not a stab)
As it is written the secondary weapon needs to have both the Nick+light property, and the primary weapon only needs to be Light. So the action would look like this.
Weapon with the light property + weapon with both Nick and Light property as the primary attack, then the Weapon with the nick+light property would be the bonus action attack only because I view it as a taste thing, it can be the main hand as well since its also light.
Melee:
PA: Short Sword+Dagger BAA: Dagger for a total of 3 weapon hits
Ranged:
PA: Hand Crossbow+Dagger BAA: Crossbow (if you have Crossbow expert) otherwise Dagger for a total of 3 weapon hits.
