so each skill and tool is linked to a ability score, problem is I can't find a solid answer what tool is linked to what ability score! and some appear to be linked to more than one ability score! here are some examples: Alchemist’s supplies: wisdom or intelligence

There is no specific ability score associated with tools.
Tools
A tool helps you to do something you couldn't otherwise do, such as craft or repair an item, forge a document, or pick a lock. Your race, class, background, or feats give you proficiency with certain tools. Proficiency with a tool allows you to add your proficiency bonus to any ability check you make using that tool. Tool use is not tied to a single ability, since proficiency with a tool represents broader knowledge of its use. For example, the DM might ask you to make a Dexterity check to carve a fine detail with your woodcarver's tools, or a Strength check to make something out of particularly hard wood.
The same is more or less true for skills as well - the DM can mix and match abilities and skills when it makes sense - but skills have an intuitive ability score to default to while tool proficiency represent a broad skill set since they're more like learning a trade.
well for skills themselves there pretty glued to there chosen ability score MINUS intimidation witch can be argued that you should be able to use your main stat witch you use for you attacks (wizards put on a fancy fire work show, a barbarian flexing or a dex based fighter showing off there moves)

Skills can, and should, have some leeway to allow for some unorthodox uses if they apply to the situation and how they're handled.
I can be pretty persuasive with my charismatic nature, or I can use my superior intellect to give you facts to persuade you, maybe I can simply use my experience in life (wisdom) to give you tales which can be quite persuasive too.
Just because my nimble character is trying to beat someone in a foot race doesn't necessarily mean I'm using STR (Athletics). If it's just a 100 meter dash I could argue that a DEX (Athletics) would be viable since the person who is quickest off the line will probably win. Where as if it were a marathon, I'll concede that STR (Athletics) could be appropriate, however you're also talking about a forced bit of effort so maybe you could say CON (Athletics) for maintaining your stamina?

Generally speaking, I always use the ability score that makes most sense for the task.

Xanathar's Guide to Everything also has an optional rule that uses INT (Sleight of Hand) checks for tying and untying knots.
