In my games I would allow this, so long as whatever 'killed' the skeleton did not turn it to dust (Disintegrate). The spell specifically only calls for a pile of bones, so if someone chops the skeleton down, technically you still have a pile of bones, the magic of your spell would 'stitch' it back together again.

I have a necromancer in the group that picked to travel to the desert. very curious how many skeletons he would find there so recycling is most likely what he will need to do .D
Things die in the dessert, maybe not always humanoids, but it doesn't say humanoid bones are necessarily needed. Might be cool to have an animated coyote or snake :-)
The spell doesn't make any requirements that aren't satisfied by what is left behind when a skeletal monster is defeated, and I don't add any to my games, so re-animating works just fine.
On zombies, too, though the way they were defeated might mean a skeleton can be animated but not another zombie - if the state of the remains is more "pile of bones" than "corpse" at that point.
When using Animate Dead and your skeleton dies, can you "resurrect" the same skeleton by casting Animate Dead anew?

As long as at least 80% of it's still in tact meaning if It can walk and has one usable arm..Sure why not
