So I have plans in my game to have a large force siege a city deep within a country. What inventive ways can you all think of to discretely move an organized army without being noticed?

There's always a Trojan Horse, or simply disguising them as refugees or a group of religious pilgrims resting on their way to this, that, or the other. 🤷♂️

A carnival has come to town, they seem to have a lot of extra workers but it seems like a well to do carnival and everyone is having a good time. Whats a few more people in town for the carnival right?

I was going to suggest a few merchant caravans. Just have them strategically dispersed and then converge on a predetermined day. That wouldn't allow an enormous army to arrive in secret but it could get the ball rolling well enough.

Maybe have them shift through another plane, reverting back to the material plane once they reach the relative spot in whatever plane they travel through, appearing close to the city.
Maybe have them tunnel through the Underdark of they're drow or drow-allied.
Maybe have them travel by air. Maybe their magi-technicians rigged up airships as transportation, or maybe they have giant eagle mounts, something along those lines.
If it's a mercenary army, they could be hired from anywhere in the world in smaller batches, and told to gather at a specific destination (perhaps there's magic involved to make sure someone doesn't spill the beans, or perhaps their given an item that tells them where to go and they don't know what the target is).
Or, you could always levitate a whole castle and plop it down next to your target (some ideas on lore for that here and here).

Look at the descriptions for classes. They have small stories.
Maybe have them shift through another plane, reverting back to the material plane once they reach the relative spot in whatever plane they travel through, appearing close to the city.
Maybe have them tunnel through the Underdark of they're drow or drow-allied.
Maybe have them travel by air. Maybe their magi-technicians rigged up airships as transportation, or maybe they have giant eagle mounts, something along those lines.
Burrowing through the Underdark makes sense.
They could have hooked up a permanent teleportation circle outside the city.
They could have some artifact that makes it really foggy, and sneak up in the fog.
