You should read through the descriptions for each Paladin oath and try to write one for yours.
I would imagine that an Oath of Knowledge would have less to do with upholding the truth, and more to do with the discovery of hidden secrets and free trade of ideas. The underlying principle being that the righteous path can only be followed by those who see the world for what it truly is.
Building it with True Seeing as a capstone ability would seem appropriate.

Basically a Science Paladin.
[apologies if I'm skirting forum rules with the following, but here goes] Considering the post-truth society we seem to be living in, I think upholding truth and objectivity should actually be at the center of a Knowledge paladin's creed. They'd oppose anti-intellectualism, promote learning and education, and prize critical thought.

Upholding the truth sounds like a cool ideal. And to add onto the free movement of ideas, for extra drama, you can include something like "must tell the whole truth" or "not hide the truth" into the creed, so the paladin cannot stay silent either whenever the truth does not suit them.
Being able to automatically succeed on checks to discern whether someone is lying would be pretty cool too as a subclass ability.
I actually had such a Paladin homebrew in the works...I just couldn't think of a decent Level 20 capstone...
Called it the Oath of Erudition: the paladins were devoted to the seeking & preservation of knowledge. They understood that some knowledge was too dangerous to be left in the hands of some; and that knowledge itself contained the collective memories of entire civilizations. These paladins often safeguarded temples, libraries, or other reservoirs of books or research.
For varieties sake, nothing in their tenants said they must use the knowledge for good, either...an ambitious Erudition Paladin could gather knowledge to consolidate their own power.
An "Oath of Devotion" or an "Oath of the Crown" paladin could become a "knowledge" paladin, in a way...a Devotion paladin could devote themselves to a deity of knowledge like Oghma or Mystra, and preserve the truth...truth & honor is right in their tenants.
Oath of the Crown could approach a knowledge paladin in the mindset that civilization thrives off knowledge; and so you protect the truth to preserve civilization.

I'd be careful with limiting players too much. Being unable to lie is one thing, but of such people using true words to intentionally mislead people is a staple. Plus being able to resist an antagonist asking you a question doesn't sound that fun.

"Telling the whole truth" part bars the paladin from intentionally misleading people. Basically, the concept is that the paladin is not allowed to abuse the truth in any way, shape, or form.
As for being unable to resist enemies asking the paladin questions, I agree that could be problematic, but that is where the drama comes in.

i agree with this statement
might make a oath of truth myself (already have a good character ready for it.)

All men can see the tactics whereby I conquer, but what none can see is the strategy out of which victory is evolved.
