Use Tasha's optional "Customise Your Origin" rules for replacing racial languages - and don't select any new languages to learn or just one.
The other method would be to create homebrew duplicates of the races your players want to play and remove/change the language abilities as necessary - then make the players use the homebrew versions.
D&D no longer makes a distinction between speaking a language and reading it. Though, I saw campaigns where players chose to be illiterate in languages or able to read but not pronounce languages. Illiteracy will be a voluntary character trait, but I see no reason not to allow it if it doesn't impede the group.

Thank you, I'll try it. I am pretty new to DDB. Is it typical that we have to take a longer path to implement simple house rules, or is this just an edge case? I hoped that I just oversaw an option to delete a (any) feature from off the sheet.
We have just started a new campaign in our own world.
Languages are based on nations and regions, and not races like in the default setting (mostly).
Also, the players start with only a single language (with one exception), and not all of them are literate.
I know how to add additional languages, but how do I remove starting languages from the player characters?

unable to get rid of previous languages can only add them. customise your origin is on. pls help
