Nick weapons let you make an off-hand attack as part of a regular attack action instead of having to use your bonus action. Since this still leaves you with a bonus action can you make a 2nd off-hand attack using your bonus action as normal or can you only make one off-hand attack per turn?
Ypu can make the extra attack of the Light property only once per turn, as specified in the Nick rules.
Once your BA is free, though, you can use it for any other bonus action you may have that lets you make an attack. The Dual Wielder feat provides a bonus action specifically built for this scenario, since it conveniently shares the same trigger as the Light BA.

Easiest way to do this 5 levels fighter.
Fighting Style Dual Wielder, (any subclass, champion has a +1 to critical and this is a crit farming build, although Eldritch Knight and Psi Warrior are awesome options here.) You want your highest stat to be Dex, this is not a tank build, do recommend taking backgrounds with Dex in them (Charlatan, Criminal, Entertainer, Guide, Sailor, Scribe, Soldier, Wayfarer Notable personal favorites Wayfarer & Soldier, lucky and Savage Attacker are great starter feats for this build, but my player who did this took Sailor for the RP, and I love the Magic Initiate Feats at level 1 aka Guide)
Level 4 take Dual Wielder Feat this with Dual Wielder Style make the build awesome. Level 5 last Fighter level needed, although I tend to go to 6 for the feat unlock and then put 2 into dex.
If you're Action Surging, you're making more than one extra attack. You're taking the full Attack action again, which means two more attacks via Extra Attack
(You don't get another Bonus Action, so no second Dual Wielder attack, and Nick/Light is specifically once per turn so you don't repeat that one either)

Another solid combo for non fighter martials: requires two weapon fighting style and dual wielder feat L1-4: attack action: shortsword (vex granting adv on next attack, scimitar (Nick - moves bonus action attack into attack action freeing bonus action) bonus action: attack with short sword or scimitar L5+ ( extra attack) attack action: short sword, scimitar (as above), short sword (vex) bonus action: scimitar attack
you do pretty much have to use the short sword and scimitar only as even with the dual wielding extra draws/ stows you really don’t have enough to keep switching in and out between the light weapon and the regular weapon.
