I am personally not a big fan of multiclassing, but I did find one combo that I personally love: One level of Order Domain Cleric, then put the rest in Divine Soul Sorcerer. Basically makes the ultimate support caster, with access to heavy armor and shields to boot. If you are worried about having enough strength for chain mail or plate, don't worry. All it does is reduce you speed if you dont have the required strength, and sorcerers are back-line casters so it does not matter as much. Even if you are worried there are plenty of ways to migate that (Mithril Armor, Broom of Flying, etc).
I'm a big fan of Wizard X/Cleric 1. It does a lot to improve the wizards survivability, especially if you take your first level in cleric.
In particular, Scribes Wizard X/Tempest Cleric 2 can do some absurd, max thunder and lightning damage shenanigans using the Scribes' ability to swap damage types and the Tempest's channel divinity. But really, pretty much any cleric and wizard subclass work well together.
Speaking of shenanigans, the Coffeelock build (Sorcerer X/Warlock 3) can effectively give you infinite spells slots if played right.
Sorcadins (Paladin 2/Sorcerer X) are awesome. Smite forever.
I could really go on forever, there's just so many great combos out there.

To add onto this, it is also really easy/great to RP and weave into a background story. Someone who use to tinker with magical items and then wanted to study Magic in its entirety.
Any Paladin/Undead Warlock (any pallock is fun for reasons we all know) and then Fighter/Arcane Trickster, gives me survivability and action surge on a great utility class, if I take 3 levels of fighter either battle master for additional maneuvers when I run out of spells or echo knight to spread myself on the battlefield.
Should've mentioned the Bar-BEAR-ian: Circle of Moon Druid/Bear Totem Barbarian. Great combo that can give you a downright absurd amount of HP and make the ultimate tank.
I've never personally played this build, just heard about its shenanigans. So I've got no idea what the ideal level split is.
Rogue (Arcane Trickster) X / Wizard (Bladesinger/Diviner) 2 That combo practically doubles the “Arcane” part of the Trickster, adds a ton of versatility, doubles your number of Cantrips, grants ritual casting, the subclass adds to your combat potential too, and all you really give up is potential access to greater invisibility. More than a fair tradeoff IMO.
Fighter (Eldritch Knight) X / Paladin 2 Half of the EK’s spell list is practically useless once you hit 5th level, and becomes entirely useless once you hit 11th level. This dip grants access to a handful of low-level spells that not only stay useful like shield of faith, divine favor becomes more useful the more attacks you get, and they don’t care about your spellcasting ability at all. Plus Divine Smite gives you something offensive to use your spell slots on as opposed to the underpowered Evocations the EK gets. Not to mention that you pick up a second Fighting Style and a little pick up from Lay on Hands. It’s a beautiful combination as long as you have the stats for it.
Bard X / Sorcerer (Divine Soul) 2 That doubles your cantrips, adds some additional healing options, and once you take the Metamagic Adept feat that couples really well with Font of Magic to really add additional versatility to the Bard without really costing you much unless you’re super lucky and your campaign makes it to 18th level+ because of the 9th-level spells.
Monk X / Ranger 2 That little bit of spellcasting, Canny, Favored Foe, and the Fighting Style really, really augment the Monk well. Just don’t waste your fighting style on Unarmed Fighting, it’s a trap for Monks. Take the Thrown Weapon style instead for that sweet, sweet dart action.
Bard X (Whispers) / Paladin 2 All the smitey goodness of a Paladin, and a fighting style, and Healing Hands, plus all the utility of the Bard and the spell slots to pour into Divine Smite, and Psychic Blades to boot. Baller.
I've had a lot of fun with a Conquest paladin/moon druid character. storywise he's an archaeologist of the Stronghorn National Museum, he "conquests" by taking everyone's stuff for the museum, and he's lawful good (ish) in that he will try to do good for people and save them, but he will also not think twice about that the idol of this village should be in the museum - he's not doing it in an evil way, he's doing it in a "doesn't understand better" way.
Mechanically he has a good set of utility spells, and I don't feel bad for taking them as the main portion of spells as he has Smite and Combat Wildshape to use the slots up in a more martial way. He also uses a Whip, because most of his damage comes from Smiting anyway, so might as well have the reach!
Looking forward to playing him in a group, as he's currently a solo character in a solo campaign!
I made a lvl 20 monk druid splash. 11 monk open palm and 9 lvls druid of spores. It's for a holiday 1 shot. I think it will be a lot of fun. Seems like it will be good for damage, but can also support with healing
Paladin/Bard its a fun flavor that doesn't always have to haha horny. Plus it makes for a very good front like support with some very spicey spell slots for smites.
I've loved playing an Artificer/Rogue combo for a huge diversity of bonus action/reaction options to totally fill up all of my turns + plenty of useful stuff to do outside of combat.
Druid/Paladin and Monk/Ranger look extremely interesting, I'm gonna have to look further into those...
Fighter/Artificer. Mine was an arcane archer 6/alchemist 4, which gave her a lot of combat options and let her be a pretty decent field medic, especially after I took the Healer feat. Plus, getting to play a brainy/nerdy fighter is always a fun subversion of the trope.
I just built a ranger1/samurai8/scout11 as a test for an upcoming campaign. I dunno about favourite or anything but holy cow if you like skills, is this one right up your alley. 8 expertise in all if you pick Skill Expert for a feat, which why wouldn’t you considering all the ASI’s this one gets.

In my experience...
Wild magic sorcerer/berserker barbarian. Doesn't work at all, but the flavor is delicious.
Anything + Fighter 2. Almost every build in the game is made way better with Action Surge

My favorite is ranger/ sorceror. Metamagic on the ranger spells, cantrips and access to lots of blasty spells makes for a very dangerous combat Gish.
