No, there isn’t any way to customize a Monsters pregenerated saving throws. However, there is a way to sortakinda fake it. First off, do not enter anything at all into the “saving throws” section, leave it blank. Then, at the very top of the “special traits” field add an entry for the saving throws. Then, to make it actually look mostly like it belongs there change the text type from “Paragraph” to “Header 3,” drop the Font Size to 14, change the color to a red from that dropdown, and finally embolden the part in the beginning. All of that combined will get it to look pretty darned close on the actual monster statblock. Image below if it helps (if you don’t see those buttons then turn your phone sideways).
