I am running a one shot game for a bunch of Classics Professors and Latin Teachers, where they are playing (5-6) level 10 heroes trying to kill Theseus (the minotaur killing hero). However, I am having massive writer's block trying to create him. Any advice for templates to follow? He will be the solo "final boss" in a lair, and the players will be inexperienced gamers with pregen characters. I also may need to reskin some weapons to be ancient Greece friendly (the only "named" weapon Theseus has is an iron club from Periphates that is not magic, but that I am thinking of as a +2 Greatclub)
My immediate instinct is to recommend the warlord as it is relatively basic and easy to run, the only issue is that it has a CR of 12. If you felt comfortable adding another enemy, I would suggest a minotaur or two minotaur skeletons. If you want Theseus to be alone, I suggest reskinning a planetar, removing the fly speed and the spellcasting when appropriate.

If he’s a solo boss, you definitely want to give him Legendary Actions, otherwise your party will swarm him with economy of action; i.e., the boss’ one round of action versus one round of actions per PC.

Thanks in advance

I don't know much about the hero you are basing it on, but game balance wise, you will want him to be around CR16.
This is a somewhat flat story of the character: https://www.greekmythology.com/Myths/Heroes/Theseus/theseus.html
The CR rating is really helpful. I had no idea where to go with that.

I think the Warlord is great. The skills actually match up well. I can add an additional attack and give him 1 or two extra skills. Thanks so much!

While adjusting the stat block, I would consult the Creating a Monster section of the DMG for rules about calculating the final CR.
