I was trying to create a ring that grants proficiency to a skill of the player's choice. If I select "proficiency" as the modifier type, then "choose a skill" is one of the options for subtype, but nothing happens when the character equips the ring. How does "choose a skill" work? Interestingly, if I choose expertise or twice proficiency as the modifier type, then "choose a skill" isn't one of the options.
Is there a site that explains the different modifier types and subtypes when creating a magic item on D&D Beyond?

That modifier subtype only presents an option to choose a skill in the character creator. So things like Race, Background, Subclass, and Feats can make use of that subtype. Magic Items do not interact with the character builder, only the character sheet. So that modifier subtype unfortunately does not work with Magic Items.
As long as you don’t publish it you can go back and re-edit things. If you make the ring and the player equips it, you can then add the skill they want.

I wondered if it was something like that. So I guess I have to create the ring after the player decides what skill they want to apply the bonus to.
