Could a character use an illusion to cover the face/eyes of the creature to avoid the affect?
There aren't any spells that would reliably accomplish that as far as I know.
Are there other ways to overcome these affects?
Even the playing field by making the monster fight blind too. Fog Cloud is inexpensive.
Grapples and shoves use ability checks instead of attack rolls, so they don't get penalized by being unable to see your opponent. Work together with your friends to shove the enemy prone and keep them there.
The Alert feat will negate an enemy's advantage from your inability to see them. Saving throw spells also won't be impacted by fighting blind, so if you have access to magic, a cantrip like Sword Burst or Thunderclap can be fired off blindly with no disadvantages (as long as you don't hurt your allies too.)
Using a mirror is a way to at least know where the creature is when attacking. It won't eliminate all penalties, but better than fighting completely blind.
Creatures with gaze attacks are fun to use because of the challenge they present.
Chainlock + other spellcaster beat medusa in initiative. Chainlock(Archfey) w/ an invisible imp casts greater invisibility on the medusa. Other spellcaster casts/has readied faerie fire. Profit.

Nothing is worse than having to avert your gaze, or attack blind because of the various D&D gaze attacks. Umber Hulk, Medusa, Ghost etc.
