why does no one use this as a ranger companion. they are great for small characters like gnomes or halflings.

I'm making a Forest Elf Ranger, and I want him to have a Giant Weasel. Know why? Because I am a simple girl that LOVES supersized cute things. Imagine, if you will, an Ermine Stoat. They have the most gorgeous, white fur, the smallest most precious tail, and the biggest most dazzling eyes. Now, imagine one the size of a Mastiff. SO CUTE.
I have a druid that is being threatened by a kobold (death threat) how I get out of it... wild shape into a giant weasel.

Probably because all the 1/4 CR beasts are so much better. Panthers, for instance, are far superior to giant weasels in combat, because they have larger damage dice, better physical stats, and the ability to knock an enemy prone and proceed to perform a second attack. I do think giant weasels should have better stats, though.
Darkvision 60ft, Stealth +5, AND Keen Hearing and Smell. Creatures, plants, and traps made of metal/oil/acid/poison can all be sniffed out with advantage. Listen around corners with advantage. Stealth into a cavern and see in the dark out to 60 feet. If you're exploring in a dark area, this is probably the best utility wild shape available at low levels. Cast Detect Magic on yourself first and for the next 10 minutes you can detect virtually anything the DM can throw at you. Or cast Pass Without Trace and get +15 to stealth. Roll nat 1s and still remain hidden as you map out the whole dungeon!

This is a very singularly situational thing, but I wish giant weasels were immune to the cockatrice's petrification ability, it'd be a brilliant nod to the real world lore of cockatrices

My h-elf ranger has one, named Pauly, named after Pauly Shore. Far less intimidating to have following around in an urban environment.

In our campaign, our goblin rogue/warlock charmed one after our party killed it's master. He rides him into battle often. lol
Note the finesse Bite attack; this is one of the only natural attacks usable with Sneak Attack per RAW. At CR 1/8, it's accessible by any Druid subclass, making Druid/Rogue multiclasses very viable.
The bite attack doesn't have the Finesse property though?
Yes, because 1/4 is greater than 1/8.
