That's what I'm going to try with mine if my DM lets me.
A hawk is an ambush predator which doesn't start a fight it can't win without serious risk. However, it can be taught to harry an opponent it can't personally kill. Work with your DM to come up with a way to train animals using Animal Handling, and train the hawk to flyby while distracting the target to provide the help action. There are a few proficiencies which almost never see use in a typical campaign, and getting some use out of them is certainly more interesting than the same old rote tactics.
Size small can't ride size tiny. You'd need a giant eagle.

There is nothing in the Help action rules that states it's OK to move after the Help. There's also nothing stating that you can't.
"Alternatively, you can aid a friendly creature in attacking a creature within 5 feet of you. You feint, distract the target, or in some other way team up to make your ally's attack more effective. If your ally attacks the target before your next turn, the first attack roll is made with advantage."
Conclusion: The ally's *attack* must occur while you are *attacking*.
However, with that said, all "actions" happen simultaneously in a combat round, we simply resolve them in order. And, let's face it, previous actions affect subsequent actions, meaning that the "simultaneous" really goes out the window at 95% of tables. If one of your players was going to attack the Gnoll who dies right before he goes, do you let them do something else? OFC you do. Because it's a game, not a physical simulation.
Meaning, order matters, yet the rule is quite clear. If order did NOT matter, then why couldn't the Ranger who attack RIGHT BEFORE I use the Help action gain benefit? After all...same combat round, right? Clearly, that is not allowed. Order matters, and as such, the tense of those verbs matter.
Of course every DM is allowed to run it at their table how they wish, but at my table, if you're going to take the Help action, you need to remain within 5 feet of the creature.
Subsequently, if you are Incapacitated before your Help is resolved, it's gone.

I believe a medium creature uses strength s or times fifteen. A small creature would half this number, and a tiny creature would half it again, for a total of 75/4. For a total carry weight of 18.75 lbs, 37.5 is possible for it but it would be encumbered, and at its limits, with a speed of 5 ft.
