Description
Veterans are professional fighters that take up arms for pay or to protect something they believe in or value. Their ranks include soldiers retired from long service and warriors who never served anyone but themselves.

(Until the DM says different) NPC's do not follow the same rules as PC's. The PC's are truly extraordinary individuals.
I love how veteran really just means mercenary.
Note that a direwolf only gets 1 attack, while the veteran gets up to 3. That is two longsword attacks one-handed, and one shortsword, for an average of 20 damage.
May as well have Parry if bandit captains and Knights do.
It doesn't deal more damage than a knight, but has fewer abilities and lower AC.
Also parry makes more sense for someone using a side-sword than it does for a greatsword user.
(Of course you CAN parry with a greatsword, but parrying with an off-hand short sword or dagger is well established)
