I can also confirm in reality quarterstaff can be wielded one-handed quite effectively. A quick jab with the end of the staff to the solar plexus, chin, throat or groin can be quite devastating. Two-handed wielding comes into play for broad swinging moves, trips, defensive blocks, and other intricate moves.
So have any of you dual-wielded staves before? I have a character who does that(1 lv fighter/1 lv monk, variant human(Dual-wielder)) and I want to know if it is actually viable.
Me personally? No. Viable? I suppose maybe if you took a couple of feats, doesn't seem like the typical person or even typical martial artist would have much facility with it absent focused practice (i.e. you're spending some time learning how to do this, as opposed to something else). A good option? I don't know, try some sparring.
