Is there a way to make a subclass that uses an entirely different stat for calculating unarmored AC? Like, doesn't include dexterity at all? The closest I have is that it's adding the stat and base armor class properly, but then it's also adding dexterity.
I'm currently using a Set Unarmored Armor Class modifier.

You also need a second modifier:
Set->AC Max Dex Modifier->0
