Fighting styles are definitely not all created equal. The Tasha’s stuff is pretty potent. Defense is always good. Archery and dueling are good, but build dependent.
Great weapon fighter and two weapon fighting are the only ones I think are underwhelming.

I’m really into blind fighting these days.
Yeah, I said I'm kind of enamored with BF also. But it really is only situationally useful. Defense will help you all the time. Dueling will help you all the time. BF is very situational, but in those situations, you would be very happy to have it.

Yeah, I should have clarified that I’ve been messing around with it on spell sword characters that can throw down a fog cloud. Kind of hard to make intentional use of otherwise
I'm playing a Warforged Unarmed Fighter. The fact that their dice can be higher than a 10th level monk is huge. This way you can play brawlers without having to take levels in monk to make it unlaughable. You can get right into the fight. It really helps out the flavor of your character, that their blows are not something to be trifled with.
Now, one of the reasons I'm playing the Warforged Unarmed Fighter is because my DM is running Out of the Abyss. This campaign starts off (spoiler) with the characters trapped in a cell without any equipment. I was originally playing a Wild Magic Sorcerer, but I didn't have a spellcasting focus, and the first time I cast a spell, I got a Wild Magic Surge that got me killed. My DM said that I could make a new character that would be brought in as a new prisoner, so I decided to somewhat prepare myself, and this way, I don't need a weapon. I know that situations like these are much more suited for characters that use their fists, but still, I really like this Fighting Style.

I really like Dueling and have it optimized to the most by combining it with a Spear and PAM feat. My Action Surge rounds were really scary.
Dueling is better at low levels, than high levels. +2 damage is really good at level 1, but kind of "meh" at level 15. But thanks to the optional rules, we can now take dueling or some other fighting style, then dump it for something more useful for higher levels.
Two weapon fighting is my favourite. It’s not quite as useful at high levels, but at low levels you will be number one for damage, especially if you play a variant human and take the dual wielder feat and some rapiers if you are DEX based (reskin them into longer scimitars or something if you want, just change the damage type accordingly), or longswords or battleaxes if you’re STR based.
Born under the watch of something from the furthest corners of the far realms.... It knows all.... it sees all... and it asks: "What is it that you want to see?"... and my answer is... ALL"
Unarmed fighting is probably the coolest flavor-wise: "The knight, clad in plate armor, dismounts from his horse to meet the outlaw, to the bandit's surprise, the knight casts his sword and shield to this side, cracking his knuckles, the outlaw sneers, this is going to be easier than he thought, he charges at the knight with his spear brutishly, the knight, telegraphing the outlaw's next move. dodges to the side and jumps in the air to deliver two roundhouse kicks to the side of the bandit's head".
Man, i was hoping for a drop kick. But a roundhouse kick will do. Still upvote for cool scenario.

I picked Blind Fighting (was a toss up with Dueling)!
IF you can get access to spells like Darkness + Fog Cloud, you can achieve some interesting Advantage/Disadvantage scenarios with enemies....
BUT, that said, a DM who gets tired of cheese will start bringing out enemies with Blind Fighting, Counterspell, Dispel, 3lvl+ Magical Light Sources, Gust of Wind, DevilSight, TrueSight, Concentration saving throw focus fire........so too much Cheese brings down DM Divine Retribution!!!
So, while Blind Fighting has some interesting synergy potential, Dueling is a more 'slow+steady' choice. Both are both top tier Feats for melee builds!
I am a multiclassing fan. Love fighter/Ranger with Archerey and Blind fighting combo. Crossbow expert feat, race Dark Elf for Darkness spell and poof you are deadly in the dark and upclose.

Archery is definitely my favorite. Small damage boosts are nice, but I'd rather increase my damage output by hitting more often :)

Yeah, the best one if you use ranged attacks for your main damage.

"What about side by side with a side?"
"Aye, I eye eye eye."

Unarmed fighting because weapons are overrated.

I like blind fighting (via the fighting initiate feat) for a shadow monk (or any class that can cast darkness).
