They do not have to match. Since you can replace spells as you level, it doesn’t have to work out that your known spells are the same as your slots.
But that won’t change what you can cast, since the number of slots stays the same. Even if you know 4, 4th level spells, you can only cast one of them per day.
Maybe a dumb question... Can a knight with 2 or more attacks per action use a leveled spell as 1 of those attacks?
Only if the DM allows it as a houserule. Casting any Spell, including Cantrips, requires the [Tooltip Not Found] Action. Extra Attacks apply to the Attack Action. Those are not the same and cannot be interchanged. (However, if you multi class and take six levels in wizard you can pick up the updated Subclass that will let you casted can trip as one of those attacks.) That’s the one drawback to EKs, they can either fight or cast. Compared to the AT, which can lay down something with concentration, use cunning action, and then cast booming blade or green flame blade every turn. And they could use Magic Stone too if they can pick it up.
As a fighter you have the option of using action surge to get both a spell and attacks off in the same turn. But otherwise no, you can't do spells and attacks in the same turn unless the spell is a bonus action cast time etc.

Awesome. Thank you for the clarification. I wanted to have a couple extra 3rd and 4th level spells to have options later on in the game.
They don’t match for any of the casters.

Essentially no, but at level 18 when you cast a leveled spell you also get a Bonus Action Attack. Combinations possible:
Round 1) Attack 3 time. When you hit, you cause disadvantage on the next Save for a spell you cast.
Round 2) Hold Person + Attack. Hits are automatically crits.
Round 3 etc.) If the Hold Person sticks, you’ll be doing a lot of damage each round.
