I've been playing D&D with a group for a short while now, maybe a year. But I've never played a rogue, I'm looking to play a hunter/ranged, crossbow/bow user, but I'm not sure with which subclass to choose. I've heard many people pick assassin for the ability it gets, but it seems like it be boring if I was only trying for high damage, I'd also like something that would fit a ranged playstyle.
I was also curious if anyone knows of any fighter/rogue multiclasses, the idea of dual wielding hand crossbows with the "Extra Attack" ability is pretty appealing. I've seen that scout is has some neat abilities for being at a distance, if nothing else I could always go with that, but I was curious if anybody had some insight on other possible options.

You haven't quite told us what you're looking for in terms of play style. Yeah, you said you want to be ranged, but "assassin seems like it'd be boring" indicates that you want more. If you could tell what what race and background you are going for it would help. Without that knowledge, assassin can be fun if played right, as can scout. Mastermind would be fun for roleplaying and you get to use the help action at 30 ft. Arcane Trickster is all ways fun as well. Without playing each subclass, you don't really get to know what each one is capable of. I'd say pick one and run with it and if you don't like how it turned out, you can all ways kill them off and bring in a new character. The only way a character is boring is if you make them that way, or the group is too big to really get into roleplaying or combat turns take too long. So my advise is to pick one and run with it and try it out and see how you like it. I didn't think I'd like the Arcane Trickster till I played one and I thought it was really fun.

Remember this is a game and it's suppose to be fun for everybody. Let's all have fun and kill monsters.
RAW it impossible to load 2 one handed crosbow because the ammunition need a free hand to load. Even with Crossbow Expert feat you still need a free hand to load, If you only use one hand crossbow there no reaseon to dual it, since now you loading penalty from crossbow negated, allowing to shoot multiple time and even use your BA to shoot again.
As for archer intresting classes: gloomstalker ranger: WIS initative, invisble against other creature who only use darkvision as sense. assassin rogue: advantage on anything with lower iniative then you battle master fighter: battle manouvers that enchant your attacks precision strike manouvers pretty nice to negate the sharpshooter feat to hit penalty. You can also use trip attack on your last attack to prone it giving advantage to your melee budies and making it lose movement to get back up. Kensei monk: Monk in itself has alot ranged/spell defense and has even more speed to kite away kensei can enchant your ranged weapon and you still capable to defend yourself in melee if needed War domain cleric: when using Attack action war priest allow you to attack again with BA (limit to your +WIS per long rest) also give you acces to buffing spell like bless making it easier to hit your target.

I said 'the benefits of', not actually dual wielding two crossbows. I mean holding one crossbow, and firing it multiple times.

Sorry for not being specific, I like different races but usually I'll go variant human or half-elf. I'll take this all in to mind, I think I got a concept for a character now. Thanks!

The problem with dual wielding hand crossbows is that you need a free hand to load them.
If you get the crossbow expert feat, you get the benefits of dual wielding while having a free hand to load your single hand crossbow.
