if you take a level in fighter for your starting level you can get chain armor with proficiency and get any weapon with proficiency for a total of 18 AC and any weapon you desire while still being able to cast 9th level spells

To do this effectively you either need a 13 strength or you need to be a mountain Dwarf.
Personally I would not do this at 1st level because I would not want to give up Wisdom save proficiency. IME Wisdom saves screw you far worse than Con saves, even on a caster.
Be a tortle or lizardfolk to gain a higher armor class. Half-orcs also work well because of their relentless endurance feature. I have played with a Half-orc sorcerer for a while and he would probably have died long ago without that trait.
Assuming that your wizard character still has ten fingers, couldn't you find/create, and wear 10 rings of protection? That would obviously increase your AC by a lot! But creating that much magic items would be worth lots of time and money!
I also love d̶̡̼̥̻͙̣̼̿͂͐͘ę̴̢̨̛̼̙̤̻̞̠̗̳̝̦̹̹̦͍̉̏͛̽͠͠sţ̵̢̼̹̭̖͔͎̞̪͇͚̞̇̀̇̀̒͂̇̍͊̏ru̸̮̭̪̠͆̑̍́̈́̑̾̒̑̂̕ͅc̶̢̜͓̮̩͎͕̄́͑̃̈͋̈͌̑̽͠ͅͅţ̵̢̼̹̭̖͔͎̞̪͇͚̞̇̀̇̀̒͂̇̍͊̏io̵̪̭̞̗̝͙̝̬̥͕̒ͅn̸̨͖̳͓͍̜̬̗̪̜̪̗̺͆̏̆̊́̈́̿̎̅̈͠͝͝ in my campaigns! In other words, i'm an evil DM.

No. Because...
An item can be attuned to only one creature at a time, and a creature can be attuned to no more than three magic items at a time. Any attempt to attune to a fourth item fails; the creature must end its attunement to an item first. Additionally, a creature can't attune to more than one copy of an item. For example, a creature can't attune to more than one ring of protection at a time.
This is why there is a Ring of Protection and a Cloak of Protection and why they are different rarities. It's one of the few ways to gain the same benefit from different items.

I've made a 50hp 22 AC (or 14 or 17 or 19 with and without bladesong and shield) only with light armor
One of your best bets is to go for dwarf for the dwarven toughness ability and I got tough feat as my first ASI (I'm level five) using d6, +3 CON +3 INT +2 DEX (point buy and TCoE)
Or be a goliath and reduce the damage done to you with stone's endurance.
I also think some form of gith has the shield spell which would be handy to have because you get one free casting without a spell slot.
Mountain dwarves have proficiency in more armor which would be useful. And hill dwarves get more hit points.
Locathah have some natural armor I think, but I don't own them to know for sure. So do loxodon, and simic hybrids probably have an armor bonus. I said earlier that tortles and lizardfolk get natural armor too.
Warforged have armor class bonuses too.
I know shifters have some forms that make you more survivable.
Or be a variant human and get the tough feat to get more hit points, you could also get a feat that upgrades your armor.
There are all sorts of ways to give you character a better chance at surviving.
To bad I am already near level 20. lol

The best AC for a wizard is an angry half-orc with a great axe that's between the wizard and the thing that's trying to attack the wizard.
Find your own truth, choose your enemies carefully, and never deal with a dragon.
"Canon" is what's factual to D&D lore. "Cannon" is what you're going to be shot with if you keep getting the word wrong.

Just a goober doing my own work when I want to. I like the idea of not just high fantasy dnd.
