I swear when you brought up a monster, they used to have rollable stats, but I'm not seeing that anymore unless I'm actually in a running encounter? Is there a way to verify that a monster has rollable stats (i'm working on some homebrew) without putting it in an encounter and running it?
I'm currently using DnD Beyond with Roll 20 using the Beyond 20 extension. Recently the DnD Beyond team has started introducing numerous breaking changes that cause the extension to fail.
I'm thinking about consolidating everything into Roll 20 and just dumping Beyond entirely.
As a DM, the biggest thing for me with Beyond is the rollable stat blocks in the Encounter Builder. It's nice to be able to just click a monsters "to hit" attack, let Beyond roll it, then show the result to my players in R20 automatically. https://xender.vip/
Does Roll 20 offer any feature like this? Is it possible to set up my monster stat blocks to roll automatically?

Yes.
In Roll20 in the Journal you can lookup the monster and drag it onto the map, or you can add a character to create an NPC/new monster. Either way the monster appears in your journal and you can click on actions, attacks, etc in the sheet and it roll into the Roll20 dice log.

I recently created an eldritch cannon as a homebrew sidekick for a player. I made the stats rollable. In an encounter, I can see the roll buttons and press them, but my player cannot. Is there a way to make it available to my player? Or, is there a better way to do this? Do I have to get the player to create it themselves?

Only a DM can roll monster stuff in encounters.
You can try making a character sheet, choose fighter, and override the stats and add custom actions to match, then player can claim the character sheet and be able to click stuff there. Very clunky, and time consuming, but it's one way.

No, it only ever worked in the encounter builder or an actual encounter.
