First off feel free to let me know if this has been suggested before. One thing i would love to see on DnD Beyond is a character sheet for pets/companion animals.
My character has a Death Dog he managed to "tame" and while i have him as a Homebrew Monster, i would really like him as an actual character sheet so i can level and edit him the way i do my character.
Monsters don't level up, there are no rules for it, and DDB won't make tools not based on rules.
There are sidekicks that can level up and those are currently designed as monsters, though they really need their own system.
I recommend making multiple "levels" (set CR to its level even if it doesn't match CR balancing) of your pet similar to how official sidekicks are implemented and putting it in extras on your character sheet.

But the rules your DM made up for your campaign might be completely different than the rules someone else makes up.
How can you make a tool that works regardless of the specifics of the rules it needs to support?
I already made a suggestion based off of existing tools and supported rulesets. So this impossible tool is also unnecessary.
The issue is there are no official rules for leveling up monsters: so how, exactly, would a "character sheet for monsters" work? What rules would it use when there are none? Your best bet is to homebrew a version of the "monster" you are using as a companion, and either edit that homebrew as your pet "levels up" or, as DxJxC suggestions, create multiple versions and shift as you level up.
If the levelups are simple (AC, HP, etc.) you can also just customize the pet on the sheet.

I don't think they need to make a new tool not based on rules that very few people would use for that.
They do plan on making a monster builder that would make homebrewing monsters faster and easier, but since you already aren't doing anything complicated, I don't think it would help you much.

2) Create a new vanilla character of any race and manually override their abilities, skill proficiency, attacks, actions, AC, saves, etc. The only added benefits over option 1 that I can see are the automatic proficiency bonus, the possibility to equip it, and the tracking of conditions and exhaustion.
I'm asking for an actual character sheet for companion animals, i don't think you understand so please stop replying
"actual character sheet for companion animals" doesn't make sense in the context of the rules of D&D.
A character sheet is formatted for displaying information for a character made using player character rules; picking a race, class, subclass, assigning ability scores etc.
'animal companions' (ie monster stat blocks) are not build using these rules and thus do not have information that can be mapped to a character sheet.
Maybe what you're asking for is a monster interactive monster stat block? One with adjustable health, tracking for limited use abilities etc? This wouldn't be a character sheet, as 'character sheet' implies a specific thing.
You obviously may ask, but I'm quite sure you'll be disappointed because your request is a very niche request that would only work for your decided "creature progression": nothing official nor universal.

I would like for a way to add NPC/monster stat blocks to a campaign without having to put them in extras of a specific character. I would also like for NPCs/monsters to be able to have inventories.
It sounds like you are asking for something more complicated, less needed, and not supported by rules compared to this though. This is especially needed for sidekicks and should be able to support them leveling up too.
