In "Modifiers" you can select "replace damage type" and choose a different type and die for damage!
This only applies to homebrew magic items, not mundane items.
I may be confusing this thread with one about making new mundane items. But changing the dice and damage type for homebrew magic items is a great feature, that isn't obvious.

At this point, there is no (separate) way to make homebrew mundane items, so one has to use the magic item homebrew system to create them. That or create a custom attack on the character sheet, but that has to be created from scratch on every character sheet that needs the item.

Also, there's an oddity where there's no one way to get all changes required for a lot of features like shillelagh and shadow blade. There's always one missing component despite multiple ways to represent them. Either a damage die type can't be altered, or range, or to hit, or damage, or... so you're left with the choice of which compromise you are least annoyed by to represent the item.

Maybe I'm not waiting long enough after saving changes, but I'm just not getting this to work. For now I'm going with this suggestion from way earlier by @NateFinch:
So, there actually is a way to do this (good enough for our purposes). On you character sheet, you can make a "custom attack" and give it whatever stats you want. 1d8 slashing that uses dex? sure. So that basically works to get a stat block up there that'll update correctly if your dex or whatever changes.

Nope. You can do as you suggest, or start with a weapon that uses the right dice and change the other traits of the weapon.

It's fairly universally accepted that if it is named the Dagger of Damage, and the description says Dagger, players and GMs will accept that it is a Dagger even if the fine print says shortsword.
The other way to change damage die on a weapon is to make it Versatile. RAW this is using a weapon with one or two hands. You can use the text description to say what the increased damage may be from - When Raging, If you don't move, whatever. Not RAW but the different damage rates will appear on the action tab.

This is the most maddening thing I've encountered so far on D&D Beyond. I'm huge into homebrew and customization and working with this has been a nightmare. I'm simply trying to make a weapon that emulates the Planetar's greatsword attack. I can add the Radiant Damage by using the Modifier Type - Damage, Modifier Subtype - Radiant, Dice Count - 5, Dice Type - d8. That's great. This catch, is that I can't in any way modify the dice type of the base weapon. I've tried editing the Versatile property, but it always shows as a d8. no matter what I set it to. I then tried to simply Ignore Weapon Property -Versatile, but nothing changed. I waited 10 minutes, thinking maybe there was a delay, but still nothing.
Why is this so clunky? This thread is years old and it seems none of the simplest changes have been implemented. It seems almost trivial to change. Still, it appears to have the functionality coded. Why when I assign Ignore Weapon Type - Versatile, does it not actually remove that property?
Edit: It took about 45 minutes for the changes to be reflected.

The best way to do it is find a weapon that does what you want first. Then change the name and change the damage type if needed.
