I know for the most part, this tab is just to keep track of any creatures that isn't actually your PC but a handful of them actually offer some mechanic differences other than an importing of another statblock, for example, anyone turned into a 'familiar' states that it can be fiend/celestial/fey type as well as the rule about using its action. Wild shape retains proficiencies as well as mental stats of the PC and so on.
Does anyone know the actual rules/differences between each type?
Most don't have mechanical differences, the Extras section just provides those categories to assist in organising your extras. When you have a familiar, a mount, a vehicle, two summoned creatures and a misc pet, it helps to have them categorised

I wouldn't Say that. Like any creature that you set as a familiar has in it's statblock the action restriction. Steel defenders and animal companions have the appropriate hp & ac adjustments when the PC levels up (and has the note of increasing their attacks & damages with the PC pb even if it doesn't calculate it for you) and wild shape retains mental scores & skill proficiencies.
So things like that

Do you mean on DDB or RAW? RAW, Tasha's provides a method of levelling up your sidekicks.

The sidekicks available in the Extras section are the sidekicks from Dragon of Icespire Peak, whose rules are not the same as those in Tasha’s. There are separate statblocks for the various levels and classes of the sidekicks included in DOIP, which folks who have purchased DOIP have access to here. For Tasha’s style sidekicks, at the moment the best option is to create a homebrew copy of the base creature and add the sidekick features, then add the sidekick as a “misc” extra, not as a sidekick. That creature then must be leveled up manually. For example, one of players has a wolf warrior sidekick. So I copied the wolf statblock and added the level appropriate warrior features.
