I am just wondering which digital books purchased have an effect on the D&DB character sheet?
For example, the PHB, Tasha's, Monsters of the Multiverse, and Xanathars will give options beyond the basics... right? Like races, sub-classes, features etc... that the character sheet wouldn't have as an option without the purchase of these digital books. Maybe some give items too?

Almost all of the books have some kind of player-facing options they add. Races, backgrounds, subclasses. Really, I think there’s only a couple that don’t. And some of them overlap, with some subclasses being printed in one book, then reprinted in Tasha’s or xanathar’s. You should just skim through them. You can look at the table of contents even if you don’t own the book.
In your opinion, which of them has more of an impact on character sheet options? Like a top 5, or top 7... something like that.
I assume PHB, Xannathars, & Tasha's are probably at the top of that list?
It depends on what you want. PHB is a pretty good all rounder. TCoE does a lot of subclasses if I remember rightly, almost but not quite as many as the PHB, but also gets you some optional rules. Monsters of the Multiverse has 33 races (a couple are updated versions of free ones, but most are updated versions from two other books that you can no longer purchase on DDB) plus a whole bunch of monsters of you're homebrewing adventures. XGtE has a few more subclass than TCoE, but is mostly oriented for helping DMs.
Ultimately, it depends what you're after. If you want races, MotM, hands down. If you want subclasses, any I've mentioned apart from MotM gets you 25-30 new subclasses.
Personally, I'd go for:
PHB - gets all the standard races, several subclasses for each of the core classes (28 total), plus the standard rules.
TCoE - gets you another 25 subclasses (which are the main form of customisation for your character), plus additional optional rules, as well as the final official class, the Artificer.
MotM - you've already got plenty of subclasses, the dozens of races will help. The bestiary is a nice boost, but useless if you don't do homebrew adventures.
XGtE - rounds out the subclasses with 27 more, plus some extras for DMs.

I am going to pick up MotM during this sale as I want the Tabaxi race in particular but I was looking for another thing to get with it, but honestly, I couldn't see anything that added anything in that regard...
I can get access to a decent number of physical books from a friend, but during this sale I just want things that add a decent number of options to the character sheet.
I guess I could pick up a campaign module perhaps...

I'm just a player/beginner, , so I look to purchase individual items and bundles of individual items from many of the book, especially the adventurer book, since I'm not going to DM a campaign from one of the Adventurers book any time soon. I guess the downside to that is that the ala cart content does not seem to go on sale and to read about what I purchased, it's just under Game Rules instead of both Game Rules and Sources . The upside is that I can purchase just the content that I want, and if later I want to buy the whole book, the price/value of the ala cart content is subtracted from what I will pay.
Player's Handbook, Tasha's, Xanathar’s & Monster's of the Multiverse are all likely worth having. For Cyber Monday maybe look at the Player's Bundle and see how it compares in price to buying PHB, Tasha's & Xanathar’s, if you are considering those.
