I might just forget about the Erinyes thing, by the time I was high enough level for it not to screw up balance, most of the game would probably be over. Having one that had black feathered wings would be more what I'd want, the scourge have bony wings right?
How does the double scimitar work though? I know I get two attacks, but is each attack a 1d4 or 2d4?
This is what the basic rules say, but I'm not sure if the 2D4 is divided between the two attacks or used in each one.

When you take the attack action and make a two-handed attack with a double-bladed scimitar, you can use a bonus action to make a melee attack with the blade at the opposite end of the weapon. This attack uses the same ability modifier as the primary attack. The weapon’s damage die for this attack is a d4, and it deals slashing damage."
It ultimately comes down to what you decide your backstory is. Any option can work, it all depends on you and your DM. Might also suggest you look into the sidekick rules that just came out in the Essentials Kit. You may be able to have a devil or fiendish sidekick, I am not certain, but you can always throw in your own twist.

Would the find steed spell let me make a mount I already own my steed? For instance, an elephant I purchase?
Oh ok. Well, I guess I can just buy myself an elephant(DM willing).
And where is the essentials kit? I couldn't find it in the sources section?
AFAIK, there is still the Target exclusive going on, so I guess only those who bought the physical copy from there can get it here via the code included.
Everyone else (like EVERYONE LIVING IN EU) will have to wait for the "embargo" to end and the content to become available for purchase here and elsewhere.

One thing to point out... if your big thing is having a companion creature as a feature, don't use that to determine what class you want to play. Companions are not as prolific as in 3.5/PF, and the combat effectiveness of the two subclasses that focus on companions are a bit lacking overall. If your DM wants you to have a connection to/contact with an Erinyes or other Fiend, then they can simply make it happen.
I suggest doing a multi-class character of Paladin (any oath) & Warlock (Hexblade). Either go 17 Paladin/3 Hexblade (for Find Greater Steed) or 6 Paladin (for Aura of Protection)/14 Hexblade.
The main benefit of taking minimum 3 levels in Warlock (Hexblade) is that you can then use your Charisma modifier for all of your attack/damage rolls & spellcasting. You still need 15 Strength to wear plate properly, but having Charisma be your main ability score is huge.

No, the companion thing is secondary. I see my character as a dark/Hellish knight, so I was going to go full warlock first but now I'm leaning towards paladin. I didn't realize that feature about the hexblade so that could be interesting. Now I'm considering doing 17 levels into paladin, then 3 into Barbarian Path of the Zealot to get an iron cannon kind of character, with +1D6 radiant on my first strikes from barb and a bonus on damage during rages.
I also figured out a way to do what I want without getting a super powered minion. With the knight background, I get a squire who can help out in some cases. I'll make this character a Tiefling with Zaria's bloodline(my patron).
Also, nice Jack of Blades avatar, I was going to say this earlier but it slipped my mind.

Okay, so the double scimitar is something like...
1st attack action (1d6+Ability Modifier).
2nd attack bonus action (1d6) no modifier.
Aasimar Protector: "... your eye to glimmer and two luminous, incorporeal wings..."
Aasimar Scourge: "... a searing light to radiate from you, pour out of your eyes and mouth, and threaten to char you."
Aasimar Fallen: "... your eyes to turn into pools of darkness and two skeletal, ghostly, flightless wings..."

Find Steed is the same thing as find familiar...
--takes on a form that you choose: a warhorse, a pony, a camel, an elk, or a mastiff. (Your DM might allow other animals to be summoned as steeds.) --

There is also a Find Greater Steed spell from Xanathar's Guide to Everything that lets you choose a griffon, a pegasus, a peryton, a dire wolf, a rhinoceros, or a saber-toothed tiger.
