In order to cast a spell with multiple components, would I have to use all three components or would I be able to choose what component to use in order to cast the spell?
ok thank bye

roll a d20 then subtract 2 then add 2 and you'll get what you rolled. that's some real magic right there
And if your class allows a spellcasting focus of some kind, you can use that in the place of the components, with the exception of any components that have an explicit value assigned, such as "Diamond worth 50GP".

Or if it's something that is consumed on usage, right?
Interesting question. RAW only explicitly refers to items having a cost. Those items are often consumed. I would say that if an item is consumed but doesn't have an associated cost, it would fall under the Focus rules.
Material (M)
Casting some spells requires particular objects, specified in parentheses in the component entry. A character can use a component pouch or a spellcasting focus (found in “Equipment”) in place of the components specified for a spell. But if a cost is indicated for a component, a character must have that specific component before he or she can cast the spell.
If a spell states that a material component is consumed by the spell, the caster must provide this component for each casting of the spell. A spellcaster must have a hand free to access a spell's material components -- or to hold a spellcasting focus -- but it can be the same hand that he or she uses to perform somatic components.
How many spells are there that consume a spell component to cast, but where the component isn't given any GP value?
There are a few I think Ice Knife uses up the drop of water. Bigby’s Hand uses up the eggshell I think, but either a Spellcasting Focus or a Components Pouch covers all of that stuff. Only materials that have a GP cost need to be replaced.
Protection from evil and good consumes holy water or powdered silver and iron. It doesn't give a GP cost for the powder, but holy water does have a set cost.

But it does not list that cost in the spell’s description for the material components, so it doesn’t matter. (One presumes that the quantity consumed is of such a minimal amount that it doesn’t count.)
Well, this is not exactly the type of component list I'm looking for, but it seems to be the only one very slightly relevant to my query:
I am trying to search for the specific components of Gaming Sets in the PHB; especially the Set of Dice. Apparently it would be something akin to the number of dice found in a Yahtzee cup, or would it be more like a certain number of each polyhedral dice?
Our Homegroup is running an adventure in the Northern part of the Sword Coast, so while I'm on the subject...
My Rogue (Thief) character has Proficiency with Gaming Dice, and I'm looking for maybe some Loaded versions - say, 2 or 3 - up near Silverymoon & Mirabar...
Anyone know of anyone who can help a zhentleman wanderer find a good fella to talk to about these things?

The Dice set in D&D i believe is designed for a game called Farkle, but I could be mistaken. Anyone with the Charlatan background can get a set of weighted dice from their background. Also, there is a magic item called a Charlatan's Die.
The loaded dice are a pair of dice with weights inside them. When using the loaded dice, a creature proficient with the dice can freely choose to roll one of these three combinations: 5 and 5, 4 and 6, or 5 and 6. A creature who is not proficient with the loaded dice cannot use this feature and the dice act as normal dice. If a creature proficient with the dice rolls and uses one of the combination numbers, there is a cumulative 5% chance that someone watching becomes suspicious. A creature can make a Dexterity (Sleight of Hand) check to swap the loaded dice for identical normal dice.

You have to provide all required components. You don't get to choose.
The material and somatic component can both be done with a single hand.
One thing to note on components, they are not used up unless it states so in the spell. Meaning a component can be re-used.

Protection from Evil and Good consumes the silver and iron dust material components, but there's no assigned value.

This may help. It's homebrew content, but doesn't seem unreasonable.
