My DM is running a one shot later in the month to introduce a new player to the game and our campaign. I'm creating a beast conclave ranger for the one shot and I want a wolf as my companion. It's bite attack has a +2 damage, even though it's strength mod is only +1. However it's dexterity mod is +2. I always thought bite used strength, but is it maybe like a finesse weapon attack? Hopefully someone could help out, maybe I've missed something somewhere! Thanks.
The key thing to realise is that monsters aren't bound by the exact same rules as player characters.
The damage of the bite is whatever the creator decided the damage should be, to be appropriate for the creature and isn't necessarily based on the stats.
When creating a monster, you usually choose what weapon properties your monster has.

Thanks for the advice! I'll speak to my DM and see if he's happy for me to say it's Dexterity determining the wolves bite attack. Makes it easier if I get to a skill increase so I can up it's dexterity for a better attack and damage modifier.

It is really your choice. The is no rule about Bite being a Finesse weapon. For some monster it is, like Giant Spider. It is not for Blink Dog.
Let the "monster" guide you.
