As long as you don’t publish (share with community) your monsters then the only possible ways for your players to see them are if you send them the link to that monster, or if they search for it under the Extras section of their character sheets (which many people forget exists or never even notice in the first place). If you really, really don’t want them to even have that remote possibility of seeing them, then you can “remove from collection” those monsters. That won’t delete them, just remove them from your active collection. Only the stuff in your collection is shared within campaigns. You can always add them back again whenever you need to to build and run your encounters, and then remove them from your collection again when done.
