So I have a lvl 2 Paladin, but I can not add spells to the sheet they only list as Prepare. Is there something I'm missing ??
Yes. You haven't read the Paladin's spellcasting feature. Here it is, I'll highlight stuff for you.
Preparing and Casting Spells
The Paladin table shows how many spell slots you have to cast your paladin spells. To cast one of your paladin spells of 1st level or higher, you must expend a slot of the spell’s level or higher. You regain all expended spell slots when you finish a long rest.
You PREPARE the list of paladin spells that are available for you to cast, choosing from the paladin spell list. When you do so, choose a number of paladin spells equal to your Charisma modifier + half your paladin level, rounded down (minimum of one spell). The spells must be of a level for which you have spell slots.
For example, if you are a 5th-level paladin, you have four 1st-level and two 2nd-level spell slots. With a Charisma of 14, your list of prepared spells can include four spells of 1st or 2nd level, in any combination. If you prepare the 1st-level spell cure wounds, you can cast it using a 1st-level or a 2nd-level slot. Casting the spell doesn’t remove it from your list of prepared spells.
You can change your list of prepared spells when you finish a long rest. Preparing a new list of paladin spells requires time spent in prayer and meditation: at least 1 minute per spell level for each spell on your list.

I'm not sure if this has been addressed or not, but some things happened in our game and my guy became a sort of changeling/mindflayer hybrid. That comes with some new spells outside of his class (mastermind), so is there a way to add them on here or do I just have to remember that?

If the racial spells work pretty much the same as other racial traits that grant limited spells, like Tieflings for example, then the answer is “yes.”If the race is supposed to have its own spell slots or something, then the answer is “likely not.”
The easiest way to learn how do something is to find something official that works the same way and use that as the template to make whatever that is, just so you can pick it apart and see how it works.
As a Paladin, you just Prepare spells each day, from the entire list of Paladin spells available to your level. So all you need to do is look at the Known spells and choose what to prepare/unprepare.
If you had cantrips you'd Add those, but Paladins don't get cantrips as a class (except via a particular Optional Class Feature.)
You have the Thief archetype. You'd need to change your Roguish Archetype to Arcane Trickster in order to have Spellcasting. Go to the Character Builder to do that.

Received Dark Gift: Mist Walker. Can I/how do I add the mist walker spell to my character sheet? TIA Cant seem to "add spells" that aren't pre-ordained. Paladin lvl 7. https://www.dndbeyond.com/characters/78303123
You have to create the Mist Walker gift as a homebrewed feat and attach the spell to that. Then you can attach the feat directly to your character sheet under Features & Traits->Feats->Manage Feats.

I'm a roque lvl 4 and can't add spells, even with arcane trickster added (shared by a friend of mine who bought the PHB).
what can be wrong or what do i have to do to make it work?
Please post a link to your character. The full url, not the share link.

Thank you so much. I was trying to copy a character sheet a friend made for to a digital version and couldn't figure it out.
Not seeing the option for my Monk either. 4th Level, chose the Cleric spell option and nada...
This app doesn't let me post a screenshot either? Not mac friendly?
What subclass are you using?
