At first I thought it was like the Dementors in the Harry Potter movies, but then I realized it is an attack, not a save. So, do they like stick their hand through you or something? I mean, I get that the actual draining of the life force requires a save, but what do they do to make the attack that deals necrotic? I'm stuck on how to describe what they're doing to the players, I could really use some help.
I've always pictured it as a non-corporeal claw or weapon attack. "The wight swings its sword at you, but instead of finding purchase in your flesh, it passes through armor and skin and seems to cut away a piece of your soul", that sort of thing.

necrotic veins reach out from the point of contact. The skin withers, blackens, and decays. You feel your vitality being drawn out of you.
That's what I thought, but they're incorporeal. How could they make contact? The only option is "A wraith passes its hand through you" and it doesn't seem quite right (or dramatic enough). Thanks though!
The Spector strikes towards you, you twist to the left trying to dodge the attack but to slow, as what you guess might be its hand and arm touches you your skin goes cold and numb, it pushes forwards and that cold sensation speads you feel the cold almost flowing towards where the Spector has pushed itself into your body and the skin around the point of entry darkens. Take x points of necrotic damage and the skin around the entry point looks almost like it has a very deep very ugly bruise but the skin has not been pierced
