I'm struggling to create some mini-bosses for my DnD group. Long story short there's quite a lot of us and they're a decent level now. I have them going up against a court of Eladrin siblings. Now, the level they are at and the numbers they carry, they could easily screw these guys up BAD. So I was wondering if it would be possible to give them a class. I was thinking a Warlock, a Paladin, and a Rogue.
Is this possible? If this is possible, how do I go about it? Do I just make them like I would make a player character?

You can, if you want create them as PCs. Totally up to you.
Part f the reason they are set up as monsters, however, is that you don't have to follow the same rules as PCs.
You would make their creature type "human, 17th level rogue", and then give them the abilities that are of value in the campaign and story.

There are rules in the DM’s Workshop section of the DMG for assigning class levels to monsters. Personally, I would start with the statblocks for the master thief (or master thief)/assassin, warlock of the archfey (or warlock of the archfey)/warlock of the fiend (or warlock of the fiend)/warlock of the great old one (or warlock of the great old one), or a modified version of the blackguard (or blackguard). Then I would add the Eladrin stuff to it. Or vice versa and add the stuff from those statblocks to the Eladrin statblocks, either way.
