You can, however, merely state changes to features of a Base Class within a Subclass. Several of the Barbarian Subclasses have features that modify Rage in this exact way.

No, there are no Barbarian subclasses in 5e that replace base Rage entirely. And even if the OP created homebrewed versions of every Barbarian subclass and added the new information, the PCs would still have the 5e Rage until 3rd level.

I went back and refreshed my memory on how Rage in 3e worked* and I would recommend not trying to copy it over exactly for the 5e Barbarian class, there are too many conflicts. It would have to be altered a little to fit this edition or else it would be a hugebig nerf more than a buff.
*Rage (Ex)
A barbarian can fly into a rage a certain number of times per day. In a rage, a barbarian temporarily gains a +4 bonus to Strength, a +4 bonus to Constitution, and a +2 morale bonus on Will saves, but he takes a -2 penalty to Armor Class. The increase in Constitution increases the barbarian’s hit points by 2 points per level, but these hit points go away at the end of the rage when his Constitution score drops back to normal. (These extra hit points are not lost first the way temporary hit points are.) While raging, a barbarian cannot use any Charisma-, Dexterity-, or Intelligence-based skills (except for Balance, Escape Artist, Intimidate, and Ride), the Concentration skill, or any abilities that require patience or concentration, nor can he cast spells or activate magic items that require a command word, a spell trigger (such as a wand), or spell completion (such as a scroll) to function. He can use any feat he has except Combat Expertise, item creation feats, and metamagic feats. A fit of rage lasts for a number of rounds equal to 3 + the character’s (newly improved) Constitution modifier. A barbarian may prematurely end his rage. At the end of the rage, the barbarian loses the rage modifiers and restrictions and becomes fatigued (-2 penalty to Strength, -2 penalty to Dexterity, can’t charge or run) for the duration of the current encounter (unless he is a 17th-level barbarian, at which point this limitation no longer applies).
A barbarian can fly into a rage only once per encounter. At 1st level he can use his rage ability once per day. At 4th level and every four levels thereafter, he can use it one additional time per day (to a maximum of six times per day at 20th level). Entering a rage takes no time itself, but a barbarian can do it only during his action, not in response to someone else’s action.
The +4 to Str would only ever result in a total +2 bonus to Str Checks & Saves, an a total +2 bonus to damage rolls. The way rage works now, they get Advantage to Str Checks & Saves which is waayyy better than a +2 bonus on average (statistically closer to +5). Additionally, this edition rage damage starts at +2 but increases to +4 at higher levels, so again, using 3e rage would be a nerf there too.
The +4 to Con would result in a +2 to AC, but then that goes away again and all that’s left is an additional 2-40 HP which would go away at the end of the rage. The 5e version instead gives a raging Barbarian resistance to all bludgeoning, piercing, and slashing damage for the duration of the rage which is waayyy better than a handful of HP that you don’t get to keep. (So many much betterers.)
The +2 bonus to Wis Saves would be kinda nice, sure. But not being able to activate a magic weapon that requires a command word would kinda suck, as would not being able to use any Dex, Int, or Cha skills other than Acrobatics (Balance & Escape Artist) or Intimidation. (“Ride” is now covered by Animal Handling.) That would mean not being able to use 9 of the 18 skills.
The rage duration would be a nerf. Admittedly most combats would be over long before the fit of rage ended, but the ones that go longer would really start to be a problem since you could not rage again during the same encounter. Not to mention only being able to Rage 1ce/day until 4th level would super suck.
About the only upside would be not requiring a bonus action to rage, but that one bonus action per combat is a small price to pay for all the benefits rage gives this edition.
TL/DR: I personally wouldn’t bother swapping how rage works for the old version, but if I did I would seriously think about how to rejigger it to fit this edition better. But you do you, your fun is not wrong.

You cannot. Rage is a base class feature, we do not have access to base class level features in the homebrewer, only subclass level features.
