So I have tried multiple different ways of creating options for my subclass. As of now, I am trying to allow the character to pick 3 different cantrips at level 1, 1 more at level 4 and one last one at 10. When in the builder, It shows 4 options, 3 say "Choose a Level 1 Option" with no actual ability to choose anything. The last drop-down says "Choose a Spell" and again no ability to choose anything from the drop-down. I previously had it set the feature to granted and saw somewhere that could be the cause of it not working, so I changed it to additional and its still not working.
Since my attempts at adding a picture to show you what I have done isnt working I will explain it. Required class level is 1, "Has options" is on, Class levels where options is known 1,1,1,4,10.
I have then under spells added the cantrips available to choose from. Is there anything else I should be doing or change?
In a similar vein, is there a way to make that same sort of cantrip choice when the option IS "granted" (like the Armorer) in a way that doesn't make the various pages all janky? My attempts thus far have not worked.
I covered “granted Options” in that thread. You would have to attach them to a separate second feature with the prerequisite of one of the Options from the first feature.
However, there is an easier way than as an Option. If you “Add a Spell,” and designate at what level you want that particular spell to become available it will automatically grant that spell at that level.

Let me rephrase that. The trouble I am having is part of the branch after the initial choice. The other branches have spells granted in the way you mention (as is normal), but I wanted one branch to be able to select from a small pool of spells (because of the theme of the particular branch), but because the branches are granted rather than selected, adding other options did not appear to work. I even tried having both methods active (the main feature granted, but having the sub-choices selectable). Either I was too impatient and my shortcut to force the updates didn't work or that method in general does not work.
I can still do as you say and make a separate feature that plays off of it, but that just makes things a mess. I was hoping I was missing some other method.

There just isn’t a way to make a granted Option work correctly without the prerequisite of another non-granted Option from a separate feature. (Both features can be at the same level however.)

You want the feature to be Granted, but not the Options. I explained how to properly set up Options (with pictures) here; (Subclasses & Races FAQ #1):
